I usually experiment with new barbecue sauces this time of the season. They're easy to make, store in the refrigerator and everyone loves them with chicken wings or veggie patties (we have a home full of vegetarians).

It's getting hot in the Bay area, and it's time for us to organize a pool party to celebrate the end of school and the beginning of summer holidays. Last night, we prepared soyrizo mushroom patties to go with honey barbecue sauce. The mixture of the patties was made of soyrizo, chopped button mushrooms, liquid smoke, bread for texture and kidney beans for added protein.

Unlike many vegetarian dishes, these burgers won't leave you wishing for meat. The texture is interesting and non-uniform, and the flavor is very bold. It's not a meat substitute, but rather a unique dish unto itself. Little Aria and I loved them too!

Green Lentil Stuffed Chicken Recipe Recipe

Little toddler Aria is truly my greatest joy. She has inspired me in all aspects of my life and I take great pride in the efforts I put into helping care for and educate her. We cook almost daily together or if not, I at least get her to watch and participate in the preparation of the dinner. She's innately curious about everything around her and wants to better understand, feel, touch everything. Today, Aria helped me prepare the green lentil filling I used to stuff chicken thighs.

The lentil filling was flavored with shallots, garlic, thyme and day-old brioche. Aria cracked an egg on top so the mixture had a binder and she absolutely loved mixing and getting her hands dirty. This recipe is a healthy approach because it's packed with fiber, iron and protein. I stuffed it into boned chicken thighs then roasted the chicken until the skin was crisp and golden. The best part was watching Aria enjoying the result that came from her hard work.

French Green Lentil Cake Recipe

Growing up in France, I never celebrated Halloween as a child. The closest events I remember were during Mardis Gras, which are Carnival celebrations after the Epiphany or King's Day. So if you notice little Aria's Halloween costume and thought you'd be scared, I miserably failed that mission. My goal was to make her as cute as possible and let her enjoy the festivities. For this, we've gone through several costumes, which she will use for the events she'll attend in the coming days.

Today, we went to the one at our local library. I had just finished preparing dinner and snapped a photo of the quick and easy dish to share with you. For this vegetarian meal, I used shallots, garlic, French Puy green lentils, thyme, parsley and day-old baguette bread.

As a general rule, I try to give Aria meat or fish at least 3 to 4 times a week and we follow the rest of the family's vegetarian diet the other days.Aria Halloween Costume

Quinoa Burger Recipe

Today is Meatless Monday, so I prepared vegetarian quinoa burgers for the occasion. I flavored them with broccoli and triple cream cheese. The burgers were so flavorful and I felt in veggie heaven; not one second did I crave the meat. 

The reason behind the deliciousness of the burger is the creamy and velvet cheese. The broccoli provided a great contrast of color and the necessary greens for a balanced diet.

 Vegetarian Homemade Black Turtle Bean Patties Recipe

This is one of our family's staple vegetarian dishes. It's rich in nutrients, healthy and very tasty. If, like me, you're not a vegetarian, you won't miss meat with this veggie pattie recipe. The texture is very similar to a ground turkey burger and the addition of garlic, onion, red chili flakes and sourdough croutons brings plenty of flavor to the dish. 

I like using black turtle beans. You can find them in most supermarkets in the dried bean aisle and sometimes in a canned version in Indian markets. You can use most black beans interchangeably, even though turtle beans are a little smaller. Just make sure you don't use black soy beans, which have a totally different consistency and taste.
