Tofu with Peanut Miso Sauce

By itself, tofu can be very bland; the best remedy is a flavorful sauce paired with a load of vegetables. In this recipe I used leftover chicken, silken tofu, broccoli, red bell peppers, beech and button mushrooms, Japanese eggplant and onions. I added the chicken pieces at the last minute after reserving a portion for the vegetarians in my house.

When paired with a thick, bold, rich peanut miso sauce and served on a bed of steamed jasmine rice, you’ll have a one-dish meal sure to satisfy your family.

Kiem Recipe (Vietnamese Vegetarian Pumpkin Soup) Recipe

This year, the Asian New Year celebration (called Tết in Vietnamese) will happen during the first week of February, according to the Lunar calendar. I've mentioned in the past that, traditionally, you're required to eat vegetarian food (ăn chay) on the last day of the previous year and the first day of New Year.

Today, I'm sharing a vegan dish called kiểm that's a staple during the celebration. The dish is a sweet, savory soup made of pumpkin, bananas, coconut milk, mung beans, lotus seeds, wood ear mushrooms, sweet potatoes, ginger, tofu and raw peanuts. This is not a very common dish and it's only made for the celebration. If you know its origin, please let me know in the feedback section.

Sweet and Sour Soup Recipe

Here's a quick and easy recipe I came up with to make use of the leftover plum roasted chicken I made over the weekend. I shredded the meat and added it to chicken stock I had stored in the freezer. A few additional ingredients, including enoki mushrooms, shiitake mushrooms, cubed silken tofu, lily buds, kaffir lime leaves, young bamboo shoots, plum sauce and lightly beaten eggs and you have a lovely bowl of sweet and sour soup. The sweetness from the plum sauce provides a nice contrast of flavor with the freshness from the kaffir lime leaves.

Since the chicken and chicken stock were ready to go, it took me almost no time to prepare the soup. So basically, an investment of one afternoon spent preparing chicken is already paying dividends!

Vegetarian Hot and Sour Soup Recipe Recipe

Hot and sour soup is a wonderful first course. It's bursting with strong flavors such as kaffir lime leaves, chiles and lime juice. To balance the dish, cubes of silken  tofuwater chestnuts and  wood ear mushrooms are added. I also thickened the broth with tapioca starch.

The girls and I are still keeping up with our daily workout routine, starting in the wee hours of the morning while the baby is sleeping. After completing our exercise, we all discuss what the menu of the day is going to be. Fun time!

Whether you're trying to fit in your bikini for the remaining days of the summer, don't like the taste of meat (like my husband Lulu), you have moral concerns or just want to cut down your grocery bills, tofu might be the ingredient to turn to.

If you're a meat lover like me, you might have preconceived notions of what tofu tastes like. When I first met my husband, I was put off by tofu because I felt that it was boring and lacking taste. Well, after seven years of marriage, I can say that I was wrong! Tofu, or soybean curd, is pretty bland by itself, but picture it as a blank canvas upon which you can "paint" whatever flavors you'd like.

I've listed some recipes that have become my family's favorites. Boiled, pan-fried or sautéed, tofu can taste absolutely delicious, and almost any meat dish can be transformed into a flavorful, vegetarian meal. Enjoy!
