Mushroom Tofu Stir Fry Recipe Recipe

Mushroom Tofu Stir Fry Recipe

02.20.13 by Jackie

My husband Lulu's niece and nephew spent the afternoon with us. It was so nice having so many children in the house. Of course, our daughter Aria was the center of attention and she loved it! While they were playing with the baby, I prepared dinner. I cooked some brown rice (Lulu's request since the beginning of the new year) and made mushroom tofu stir fry.

The stir fry is composed of combined shiitake mushrooms, oyster mushrooms and enoki mushrooms, Japanese eggplant, sugar snap peas and tofu, of course!

Zucchini Radiatore (Vegetarian Pasta Recipe) Recipe

I love the vegetables my husband has been harvesting this season. We've had lovely zucchini so far. I've already used the zucchini flowers and stuffed them with risotto, and today I sautéed the zucchini with radiatore pasta. Lulu also pulled plenty of red Creole onions from the ground, so I used them to flavor the vegetarian pasta dish.

If you're able to plant your own vegetables, you should try zucchini. The young ones are sweet and more tender. They're fairly easy to plant, and if you take good care of them, they can be prolific.

You could pair any other pasta with the veggies in this dish, but I think the lace-shaped pasta looks very fancy. To make the dish a little healthier than my usual pasta dishes, I added very little cheese (I used Asiago for its strong flavor) and instead used enoki mushrooms, which resemble strings of cheese. It’s a great way to trick the kids, both little and big, into eating healthy!

Tofu Miso Soup Recipe

Tofu Miso Soup

03.17.10 by Jackie

Tofu miso soup is very soothing. My little munchkin caught a bad cold and I thought the simple, clear broth would help with her congestion. To make the soup, I started by preparing a kombu dashi (Japanese stock) with fresh ginger. To make the traditional non-vegetarian version, just add shavings of bonito flakes, or dried and fermented tuna.

Once the stock was ready, I seasoned it with white miso paste. No salt is necessary as the miso paste is already well seasoned. Miso soup can be served with cubed tofu and accompanied with other vegetables such as soybean sprouts, enoki and shiitake mushrooms or baby spinach.

Miso paste is a fermented rice and soybean combination. I chose white miso paste which is fermented for a few weeks as opposed to regular miso (several months). I find the flavor to be less salty with a subtle sweetness. Don't be frightened by the size of miso containers sold in markets. Miso paste stores well in the refrigerator and you can make other dishes with it such as Asian salad dressing, other soup broths and vegetarian gravy.

Vegetarian Sizzling Rice Soup Recipe

Vegetarian Sizzling Rice Soup

07.09.09 by Jackie

Yesterday, I promised that I was going to post a recipe about how to make sizzling rice soup. So I reserved 1 cup of parched rice from the Indian puffed rice snack we made yesterday, called chudwa in Urdu.

My favorite part of making sizzling soup is the sound of the freshly fried puffed rice in contact with the broth. It always amazes the kids. My poor Lulu's caught a bad cold so the warm broth really helped soothe his throat.  And he's a big kid, so the sizzling amazes him too!

I added water-chestnuts for crunch and miso and tofu for protein. The result is a very healthy and flavorful soup that you can enjoy as a starter or as a full meal.

Tofu Banh Xeo (Vegetarian Vietnamese Crepe) Recipe

Tofu Bánh Xèo is a vegetarian Saigon crepe. It's is a South Vietnamese dish. The exact translation is a "sizzling cake that is deflating". The Bánh Xèo crepe has a rice flour base with coconut milk. It's a lot thicker than the French version but just as delicious. The crepe has an earthy flavor, so It's always a savory dish filled with a lot of vegetables.

I've noticed that a lot of Vietnamese dishes have French influences as a result of years of colonization. The preparations are French, but the ingredients are Vietnamese. For example, the beef fondue, called bò nhúng dấm in Vietnamese, uses a fermented shrimp paste in the sauce.

Prepare this very exotic and healthy meal for your family and friends.  You'll have another recipe in your arsenal for Sunday brunches and dinners alike.
