Bow Tie Pasta in Asparagus Sauce Recipe

Our whole family,  especially the little ones, loves bow tie pasta. The cute shape isn't the best way to hold on to sauce, but it’s a welcome change ffrom macaroni or penne. This time, I sautéed the pasta with caramelized onions and spinach and added a few other ingredients. I used grilled Portobello mushrooms for a meaty texture, diced red bell peppers for color and fresh mozzarella for extra creaminess.

The asparagus sauce is an improvisation using leftover asparagus stalks (I used the tips for making risotto). I blended them into a thick sauce and separately cooked onions with diced tomatoes, a few spices and yogurt. The sauce is quite healthy but so flavorful. If you're minding calories, you could omit the mozzarella garnish or use a low-calorie cheese such as feta cheese.

Roasted Red Bell Pepper and Asparagus Recipe

There are few side dishes that are as intensely colorful and beautiful as a platter of roasted red bell peppers and asparagus. The flavors and textures are very distinct and complementary. They don't need much in the way of dressing; I usually only add a little lemon, pickled red onion and sea salt after drizzling them with olive oil and roasting them in the oven.

It's a great party platter because you can prepare it in advance. I usually roast the vegetables several hours before we have guests over, and then dress them right before serving. You could also serve the veggies straight out of the oven if you'd like them warm. Either way, this simple yet elegant dish is a perfect way to begin a dinner party. Enjoy!

Vegetarian Tortilla Soup Recipe

I had 5 tortillas left-over from the burritos we made over the weekend that were going stale, so I decided to make a large pot of tortilla soup. I use the tortillas as a thickening agent in the soup, and also as a garnish on top of the dish. To the tortillas I added tomatoes and tomato paste for a little tartness, jalapeños for a little heat, and some kidney beans and soy chorizo for protein.

The spices give the soup an earthy flavor and the Cotija cheese and sour cream that I top each serving with are very soothing for the taste-buds.

Tortilla soup is a really hearty dish that's the perfect cure for the dreary weather we've been having here as of late.

Wild Rice and Orzo Salad with Maple Vinaigrette Recipe

This dish is really three recipes in one. I combined my wild rice, kidney bean salad and orzo pasta salad recipes together to make a light and healthy meal. The maple vinaigrette helps tie everything together.

I usually make orzo pasta salad for parties and picnics, but we've been having a heat wave here and we all felt like eating something cool. The addition of kidney beans for protein and wild rice for fiber makes the dish more of a complete meal. If you have some leftover roast chicken, you can dice or shred it and add it to the salad as well.

Creamy Ricotta and Bell Pepper Crostini Recipe

What do you do with stale bread? Make crostini. It's one of my favorite ways of turning a day-old baguette into an elegant appetizer. I love them and could eat a ton!

Typically, crostini is grilled (or toasted) bread that is covered with a flavorful topping. I made mine with a red bell pepper purée and paired it with left-over goat ricotta cheese. The cheese brings some creaminess to the topping and I love the subtle taste of the chèvre (goat in French). I flavored the crostini with some fresh mint and Meyer lemon from the garden.
