Chicken Minestrone Soup Recipe

One way to guarantee flavorful minestrone soup is to use pre-roasted chicken and chicken broth. Once you have these ready, making minestrone soup is very easy. For this winter version, I added common vegetables that are available this season, such as onions, celery, turnip and carrots. A few herbs, as well as black lentils and pipette macaroni pasta completed this rustic, thick soup. 

I don't know about your area, but we've been pulling out all our cold-weather gear. In the Bay Area this evening, temperatures dipped to near freezing; I could barely feel my nose and ears. Baby Aria was so cute in her cozy, quilted snowsuit. When we came home, this chicken minestrone soup really warmed us up.

Canh Ga Ham Thuoc Bac: Vietnamese Black Chicken Soup Recipe Recipe

Canh gà hầm thuốc bắc, or "stewed black chicken soup" in Vietnamese, is known for its medicinal properties. It's the cultural equivalent of chicken noodle soup when you feel sick. In addition to its purported healing properties, it has a reputation of enhancing lactation for breast-feeding mothers. I don't know if it really helped nourish my baby girl but the broth is very tasty.

"Gà ác", which literally translates to "cruel chicken" is black chicken. It's parboiled then cooked overnight in a slow cooker. The soup requires several ingredients called thuốc bắc (traditional Chinese medicinal herbs and roots). It's composed of several kinds of dried mushrooms, gojee berries, ginseng, almonds, dried dates, dried jujube, dried lily bulbs, dried longans and fresh ginger. The addition of dried fruits makes a delicious broth with a complex flavor and natural sweetness.

Chicken Lavash Soup Recipe (Tortilla Lime Soup) Recipe

As a child, Maman would always tell us kids not waste food; it's "tội chết" ("dreadfully sinful" in Vietnamese). Now that I'm an adult, I intend to follow in her footsteps and teach the same values to our future children. Whenever there are left-overs, I try to come up with creative ways to use them. Today, I had left-over chicken broth and roasted chicken, so I combined them to make a hearty chicken soup. I had whole wheat lavash on hand, so I decided to slice it into strips and use it as I would when making tortilla soup. The lavash also made a good thickening agent in the soup.

To the large pot of soup, I added left-over shredded roasted chicken, tomatoes, tomato paste for a little tartness, jalapeños for a little heat, lime juice, cumin, avocado and some edamame beans for texture. The lavash soup is a hearty, tasty dish that makes a complete meal that's a hit even with the kids. Well, at least the non-vegetarian kids in my house!

Pho Ga Recipe (Vietnamese Chicken Noodle Soup with Ginger)   Recipe

I've probably said it in on countless occasions; I love phở! The most commonly known version of the Vietnamese soup is phở bò (beef noodle soup) but it's pretty high in cholesterol due to the bone marrow from the quantity of beef bones used. For a lighter version that’s equally delicious, I made phở gà, chicken noodle soup with ginger.

Phở gà is judged on two main criteria: the flavor of the chicken broth and the quality of the chicken. To ensure that the broth turned out well, I used a generous helping of ginger and 6 chicken carcasses, which are very inexpensive at the Asian market. I served the soup with special Vietnamese chickens, called gà đi bộ (it literally translates to "walking chickens"). They're free-range chickens and the texture of the meat is firmer than regular chicken. The cost is higher (count $13 per chicken) but so worth it when making this dish.

Duck Noodle Soup Recipe

Roasted duck soup combines succulent roast duck with an incredibly flavorful broth. I cook the roasted duck remnants with beef bones and let them simmer for hours until the broth is sweet and delicious. I then complete the soup phở-style. By that, I mean, egg noodles are quickly boiled, then covered with the broth. The soup is finished with pieces of roasted duck, steamed bok choy and bean sprouts for extra crunch.

To me, the key to making great soup is to focus on the broth. It takes a lot of patience to get the flavor of the broth just right, but I think it's so worth it.
