Italian Corona Bean Salad Recipe Recipe

For those of you who recently started following me on Instagram, you've probably noticed our family is traveling in Italy. We landed in Rome and took a train to Florence. We wake up early in the morning to start our sightseeing, visiting the most incredible places such as Palazzo Vecchio, Pitti Palace or the Duomo and going to the most fabulous restaurants. I also wanted to check out the Mercato Centrale where I bought Corona beans. They're considered the "poor man's meat" and have a very starchy texture. So when I prepared a simple, supersized bean salad, the beans gave incredible body to the salad.

I added marinated olives, artichoke hearts, freshly-made buffalo mozzarella cheese and loads of fresh sweet basil and parsley.

Wild Rice and Hearts of Palm Salad Recipe Recipe

After making the hearts of palm crostini, my husband Lulu asked for more. I decided to make a healthier hearts of palm dish this time. I served the veggie in a wild rice salad with refreshing greens such as sugar snap peas, celery and flat-leaf parsley. A little sprinkling of sunflower seeds for crunch and crumbled blue cheese for a richer mouth feel completed the dish.

If cooked improperly, wild rice can be very tough and taste like horse food. Follow the few steps I've outlined, and you'll get soft, delicate rice with a nutty flavor.

Three Bean Salad Recipe

This salad recipe doesn't call for any vinegar or lemon juice in the dressing. The natural acidity of the nectarines is all you'll need. As an added bonus, the nectarines lend an added freshness to the dish. Three beans are used in the salad: black eyed peas, kidney beans and black beans. Crumbled feta cheese, jicama, Romaine lettuce, baby spinach leaves and a few other ingredients complete the dish.

The salad is not only tasty but filling, due to the starchy nature of the legumes. Especially with vegetarians in my house, I find that a bean salad is a simple, nutritious and tasty option for lunch when I just don't feel like cooking.

Avocado Tomato Salad (Light Salad Recipe) Recipe

This salad is made with avocado, mâche, walnuts, deep-fried tofu, juicy tomatoes and hearts of palm. The dressing is very minimal; a drizzle of white balsamic vinegar, avocado oil and salt and pepper completes the salad.

What better way is there to start a meal than with a healthy and tasty salad?
