Fresh Oysters Topped with Chorizo Dressing Recipe

After raving about duck prosciutto, it's time to talk about some serious business because Valentine's Day is near at hand. My husband Lulu being a vegetarian doesn't mean that I don't get to get to enjoy a feast for our romantic meal on February 14th. I don't know if food with aphrodisiac properties really exists, but I love oysters. During the holidays, Papa made his oyster specialty huîtres chaudes gratinées (oysters au gratin) but that's another recipe. This time around, I served them cold with a chorizo, ginger and lemon topping. And if your significant other loves oysters as much as I do, this might be the perfect starter for a romantic Valentine's Day meal.

While visiting the Château de Fontainebleau, I couldn't resist taking a quick tour of its open-air market, which was fabulous. I found the most delicious saucisses sèches (dry sausages), made of duck and turkey, and some with chorizo made from poultry meat, which tasted even better than the ones I remember from my childhood.

Mediterranean Chorizo Pasta

Mediterranean food usually reminds me of a warm summer evening but it's great during the winter season as well. All the ingredients for this pasta dish are available year 'round. I used whole wheat elbow pasta, chanterelles (girolles in French), crimini mushrooms, marinated artichokes, black olives, vine mini sweet peppers (orange, yellow and red), capers, plum tomatoes, soy chorizo (or the non-veggie version, depending on your preference) and caramelized onions.

I wanted to make comfort food for my husband that is flavorful while still being healthy for him to eat when he comes back from the gym. Comfort food doesn't always have to be cheese pasta. Of course, if you're not watching your weight, a little cheese sauce would go great!

Vegetarian Tortilla Soup Recipe

I had 5 tortillas left-over from the burritos we made over the weekend that were going stale, so I decided to make a large pot of tortilla soup. I use the tortillas as a thickening agent in the soup, and also as a garnish on top of the dish. To the tortillas I added tomatoes and tomato paste for a little tartness, jalapeños for a little heat, and some kidney beans and soy chorizo for protein.

The spices give the soup an earthy flavor and the Cotija cheese and sour cream that I top each serving with are very soothing for the taste-buds.

Tortilla soup is a really hearty dish that's the perfect cure for the dreary weather we've been having here as of late.

Hash Browns with Goat Ricotta and Chorizo Recipe

Lulu worked from home today, so I brought him breakfast in bed. I love this little ritual we have once in a while. It's my way of showing him how much I love him. I love seeing my hubby's smile when I give him special treats in the morning.

I made some hash browns with goat ricotta cheese and placed a surprise vegetarian chorizo in the center. The chorizo adds a little spiciness to the dish without overpowering the hashbrowns and also some protein. The goat cheese has a tangy taste and velvety texture that complements the other components of the dish quite well.  There's nothing wrong with good ol' fashioned hash browns (we get them from the local pancake house all the time), but if you're in the mood for something a little different, this is a great recipe to try.

Homemade Vegetarian Soy Chorizo

Soy chorizo is so easy to make. It has all the same spicy flavor of the traditional chorizo but is much lower in fat and most importantly has no cholesterol. I blend firm tofu, textured vegetable protein (TVP) with red chilies and other spices. Your first reaction will be "I can't believe it's not chorizo!" It's also high in protein.

I've found that soy chorizo is the perfect flavorful substitute for meat. I use it a lot in my Mexican-inspired dishes like tacos, enchiladas, seafood stew, Spanish-inspired paellas and of course my Shepherd's Pie.
