Spicy Stir Fried Beef and Green Beans Recipe

Stir-fried green beans and beef are a delicious dish. First, green beans are deep fried until the outer skin becomes slightly wilted. Once all the beans are fried, they're stir-fried in garlic, chili garlic sauce, black bean sauce and soy sauce with beef. I also thickened the dish with a bit of cornstarch and added chiles for extra flavor. But the key ingredient is cashew nuts which provides incredible texture and nutritional value with folic acid.

This may not be the healthiest way to prepare a stir fry, but I can’t get enough of them. The natural sweetness of the green beans balances perfectly with the tenderness of the beef. For a healthier alternative, you could substitute tofu for the meat and omit the sesame oil and sesame seeds.

Poached Quail Eggs on Polenta

This is my healthy interpretation of "bacon and eggs". The high-fat nature of this dish made me consider alternatives for brunch fare. To make the dish, I pan-fried rounds of polenta, then stacked layers (and colors) of sautéed beech mushrooms, poached quail eggs, dill pesto and crispy vegetarian bacon.

If the idea of a high calorie meal doesn't bother you, you can replicate the same recipe with real bacon, chicken eggs and increase the amount of cheese in the pesto. And don’t worry, I’m not judging!
