Cheddar Cheese Muffins (Savory Cake Recipe) Recipe

Cheddar cheese muffins are one easy appetizer. I followed a usual cake batter recipe but instead of making it sweet, I flavored it with both jalapeño Cheddar cheese and smoked cheddar cheese, sun-dried tomatoes and chopped walnuts. As a reminder of the flavors, I topped each muffin with sun-dried tomato pesto.

Today, the girls were in charge of the barbeque lunch. They grilled several vegetables, sausages for hot dogs and finally placed a few sweet potatoes in the ashes. I didn't want to interfere with their menu, so all I did was a few of these easy, cheesy appetizers. I'm sure they didn't mind!

Pan Fried King Bananas

Chuối ngự are Vietnamese bananas that look similar to small plantains. They have a starchy texture and a subtle sweetness. If you look for this particular banana in Asian markets, they're called King, Raja or emperor bananas.

King bananas can be prepared in a lot of ways. Today, I twice cooked them. First, I parboiled them, then I pan-fried the bananas in oil until golden brown. They make great appetizers if you top them with cheese and other condiments, or they also make a wonderful side dish. In this case, I paired them with baked fish.

Sun Dried Tomato Pesto Pasta with Turkey Sausage Recipe

Pasta and sausage is a combination that is probably not new to most people. The challenge is that I need to make the dish accommodate both the vegetarians and meat eaters in my house.

To this end, I separately grilled tofurkey (mock turkey made of tofu) and apple turkey sausages and mixed them into two batches of homemade sun-dried tomato pesto sauce.

Brussels Sprout Salad with Marinated Feta Cheese Recipe

We're in a funny period. It's not cold enough to make soup, but we're starting to get fall and wintry ingredients such as figs and Brussels sprouts despite the hot weather. I bought some Brussels sprouts from the local market and decided to make a salad with them. I think the brininess of the feta complements the flavor of the Brussels sprouts really well. I marinated some feta cheese with lemon juice, lemon zest and pink and green peppercorns, and added it to the steamed and grilled Brussels sprouts. The result is something that in no way resembles the boiled, lifeless Brussels sprouts that are reviled by kids and adults alike. In fact, the girls absolutely love Brussels sprouts, and they completely inhaled the salad. 

This winter, I'll post a Brussels sprout gratin that no one can resist . Stay tuned!

Simple Green Bean Salad with Toasted Sliced Almonds and Pomegranate Vinaigrette Recipe

Green bean salad is probably the simplest, healthiest dish you can make. I usually serve it as a first course or as a side dish accompanying a roasted chicken or any other white meat.

As with other easy dishes, the key is to use good, fresh ingredients. I got some crisp haricots verts fins from the local market. Haricots verts fins literally means thin string beans in French; they are much more tender than regular green beans.

For an added contrast of texture, I added some toasted, sliced almonds and some coarsely chopped sun dried tomatoes to bring a tart, acidic flavor. 

What I love about this dish is that you can mix and match green beans with anything, such as wax beans (called haricots beurres in French). Just select an ingredient that will create an appealing color contrast: nuts, capers, feta cheese or even anchovies all work well.
