Chicken Noodle Soup Recipe

My friend Hadas is pregnant with her second child and is about to give birth in a few days. Unfortunately, she became sick because of the cold weather. Since some medications can be dangerous during pregnancy, I offered to prepare chicken noodle soup with healing spices used in traditional Chinese medicine, such as turmeric, ginger, onion and red chiles.

My way of making the broth flavorful is to first sauté small pieces of chicken with garlic and red chiles, then deglaze the bits fromt he bottom of the pot with liquid to capture as much flavor as possible. I also added common vegetables (celery and carrots) to complete the soup. Hadas confirmed the soup helped soothe her sore throat.

Chicken Minestrone Soup Recipe

One way to guarantee flavorful minestrone soup is to use pre-roasted chicken and chicken broth. Once you have these ready, making minestrone soup is very easy. For this winter version, I added common vegetables that are available this season, such as onions, celery, turnip and carrots. A few herbs, as well as black lentils and pipette macaroni pasta completed this rustic, thick soup. 

I don't know about your area, but we've been pulling out all our cold-weather gear. In the Bay Area this evening, temperatures dipped to near freezing; I could barely feel my nose and ears. Baby Aria was so cute in her cozy, quilted snowsuit. When we came home, this chicken minestrone soup really warmed us up.

French Soupe au Pistou Recipe (Minestrone Soup with Pasta) Recipe

Soupe au pistou is the equivalent of minestrone soup mixed with a bit of thick, Provençal-style sauce. First, I prepared beef stock (you could also use vegetable stock for a vegetarian version), then added white beans, zucchini, carrot, peas, corn, fresh tomatoes and boiled pasta and finished the soup with a few spoonfuls of a chimichurri-like sauce made of garlic, basil, olive oil and flavorful cheeses.

Aria is old enough to eat on her own with her special baby spoon now and she loved the soupe au pistou! I used regular macaroni pasta but you could use thin pasta or cut-up spaghetti instead. I also incorporated two types of cheeses -- Gruyère and Mimolette -- for flavor. If the stock is prepared in advance, this meal shouldn't take too long to assemble.
