Pecan Squares Recipe Recipe

Pecan Squares Recipe

12.02.14 by Jackie

Maple syrup is a staple breakfast item in our pantry. We usually use it as is to drizzle over pancakes and waffles, but since we had extra pecans for Thanksgiving, the girls and I prepared pecan squares flavored with our favorite syrup.

The topping is made of a mixture of maple syrup, of course, orange zest, brown sugar and loads of pecans. I usually bake these squares during the Christmas season.

Pumpkin Banana Cupcake Recipe

11.25.14 by Jackie

Little Aria asked to see one of her favorite classmates, Colin, on a playdate. Aria can be very detail-oriented and asked if we could prepare mini cupcakes for the occasion. To make the sweet treat a lot more playful for the children, I topped the cupcakes with icing and sugar cookie letters.

The cake part is made with mashed bananas and pumpkin and I used an alphabet cookie cutter set. Aria helped out all through the baking process and she loved it. Colin loved the cupcakes too, and I was amazed to see he knew his alphabet as well. Isn't it impressive at only the tender age of three? It was so precious to watch them have so much fun!

I'm planning to bake the same larger-version cupcakes on Thursday

Miniature Sweets Recipe

Miniature Sweets

11.07.14 by Jackie

We're celebrating Aria's 3rd birthday this weekend. Needless to saty, I've been cooking up a storm. I just finished piping the cutest miniature sweets for the occasion: a duo of salted caramel chocolate and banana mousse. Even though I have been a bit busy, I'll be back to my normal routine next week.

In the meantime, here is a list of our family's favorite mini desserts that are perfect for parties. Enjoy!

Colorful Dessert for Diwali Celebration Recipe

Today Aria's preschool teachers planned a small Diwali celebration in school. Diwali is a Hindu festival and it's India's biggest holiday of the year. It's also known as the "festival of lights." The day began with a non-religious story of Diwali, then there was a beautiful Rangoli demonstration (an art and craft session), followed by a potluck lunch for the boys and girls. I volunteered to bring a nut-free dessert for the children and since I knew other mothers would bring typical, popular Indian desserts, Aria and I prepared a colorful, playful dessert instead for the children.

For the occasion, I transformed our little Aria into an Indian princess and tried to match the dessert with her colorful, festive attire. The dessert consisted of individual servings of a cookie baked in a mini cupcake liner and filled with cardamom-flavored triple chocolate cream (lemon, strawberry and milk chocolate). Needless to say, the children adored the sweet treats and Aria was so proud to tell her classmates she had helped preparing them.

Coconut and Pineapple: The Perfect Flavor Combination Recipe

When I run out of fresh fruit for desserts, I usually raid my pantry and either use chocolate or go for a flavor combination that gives me the most pleasure: pineapple and coconut. This particular flavor pairing works well together; I think it's because the subtle acidity from the pineapple helps to cut the richness of the coconut.

This afternoon, I prepared pineapple coconut oatmeal cookies with similarly flavored mousse cups. I barely had the time to let the mousse rest in the refrigerator, but little Aria had time to advertise the product of our labor to the family. By the time I wanted to shoot a few photos, everything was gone! This made me happy because it was probably the best compliment any mom could want coming from my little one. I'll prepare some more over the weekend and hopefully I'll be able to showcase the delicious treat.

Meanwhile I gathered a few desserts using the same flavor profile, and they're as delectable as the ones our family had today !
