Truffle Mushroom Risotto Stuffed Baked Apples Recipe

This is an upscale version of risotto that you could offer as a side dish (or main vegetarian course) on Thanksgiving. I love including lightly sweet ingredients in savory dishes, so I came up with the apple and mushroom risotto. I used Jonagold apples, brown mushrooms and truffle butter. 

I think making individual servings give a more elegant look to the dish, so I nested the luxurious risotto in baked apples. The apples almost turned into apple sauce which paired beautifully with the risotto.

Risotto might appear a bit fancy but once you know how to prepare the delicious rice dish you can make many variations. Today, since I'm still in France, I decided to showcase an extravagant, ritzy version with lobster and bolet mushrooms

You can prepare this comforting dish all year long. All you have to do is adapt the ingredients of the season. I added a bit of cream at the end for extra decadence and curly parsley for a nice contrast of color. Believe me, if you give this a try, you'll feel like you’re at a nice Parisian restaurant!

Parmesan Risotto with Wheatberries and Morel Mushrooms Recipe

My husband Lulu was craving risotto lately. Unfortunately, risotto can be pretty rich, which doesn’t exactly mesh well with our exercise routine. I don’t think exercising should be a form of punishment, so I took Lulu’s craving as an opportunity to be creative.

After thinking about it, I decided to make mushroom risotto using fresh morels. I chose morels because they are packed with flavor. Instead of using heavy cream and other calorie-packed ingredients, I let the mushrooms provide most of the flavor in the dish. I also added wheatberries to the Arborio rice for texture. Just make sure to soak the wheatberries overnight, so that they aren't too chewy.

It's very creamy, cozy and hearty. The basics of the risotto is always the same, typically you'll add 2 to 3 ingredients to the base to create your own signature risotto.
