Ganache-Topped Banana Blondie Recipe Recipe

Blondies and brownies are a staple in our home. Last week, we prepared fudgy blondies and covered them in milk chocolate ganache. The recipe has never steered us wrong. Bananas provide the texture of the blondie cakes and it contrasts so well against the peanut-chocolate topping called ganache. Despite its French name, ganache isn't complicated: simply melt chocolate in boiling heavy cream and add a pinch of salt. This version was prepared with a large chocolate-to-cream ratio to create a dense, thick texture with a consistency close to a chocolate truffle. Voilà!   

This is ideal for any brunch, picnic or family get-together. You can prepare the blondies at the last minute and you’ll have plenty of time to spend with your loved ones. It’s also a great recipe on which to practice your baking skills.

Chocolate Ganache Tart (Halloween Ghost Dessert) Recipe

The girls have reached the end of the first quarter, so their school gave them a day off. With Halloween just around the corner, I thought it would be fun for all of us to work on ideas for spooky desserts that they'll be able to share with their friends. It didn't take a lot of arm twisting to convince them!

I decided that we should make a simple chocolate tart and decorate it with ghosts. The tart shell is a shortbread crust that I topped with a semi-sweet chocolate ganache. To enhance the flavor of the chocolate, I added a little coffee. I let the girls pipe the top with vanilla buttercream frosting and create faces using chocolate sprinkles. As an added bonus, this dessert is egg and nut-free. We'll make smaller versions at the end of the month for when they share them with friends.

Lemon and Chocolate Filled Cardamom Thumbprints Recipe

With Halloween right around the corner, I thought I'd prepare some ghoulishly delicious thumbprint cookies. I know, I'm a dork...

I flavored the cookie dough with cardamom. Cardamom is a very versatile spice that goes well with just about everything. For the filling, I used lemon apeels and swirled in a little dark chocolate for contrast. If you're artististically inclined, you could try to draw little bats or scary faces.  No matter what you do, I guarantee it'll be terrifying how fast these cookies disappear!

Cardamom Spritz Cookies dipped in Mint Chocolate Recipe

I've made spritz sablé cookies before. The most recent variation was one made of orange and dark chocolate. The girls felt like baking today and they really wanted to make a fresh batch of the sablé cookies. I was all for it but I wanted to teach them to be creative and come up with a new flavor combination.

There was a tall pitcher of my mint and cardamom-flavored Arnold Palmer on the counter. Sunny, the eldest, looked over at it, then back at me, and said "why not mint and cardamom-flavor spritz sablé?". - I thought it was a brilliant idea. If you browse through the recipes on the website, you'll notice that I use cardamom in almost everything, from savory dishes, to drinks, to desserts. I knew it would make a perfect flavoring for the cookies.

I didn't want to add mint extract directly to the cookie dough because I thought it would be to overpowering. Instead, I used Guittard pink-colored mint chocolate chips to make a ganache, which I dipped the cookies in, once they baked and cooled. These particular spritz cookies are thicker and chewier than the orange and dark chocolate version. They both taste great so it's really a matter of personal preference. Try both and see which one you like!

Chocolate Filled Pandan Thumbprint Cookies Recipe

Thumbprint cookies are my little munchkin's favorite sweet treats. I took the girls to our neighborhood park this afternoon and I brought along a box filled with the fun-looking thumbprint-shaped sablé cookies. The other fun thing about the cookies is that it's easy to mix and match the flavors and add fun colors.

I have flavored these cookies with cardamom, star anise seeds, mango and even durian! Today I made a combination of pandan and dark chocolate with a fancy little touch of vanilla.

Needless to say, everyone was very tired and hungry after jumping up and down on the monkey bars and on the swings. All the cookies were gone, so it's a good thing I took pictures beforehand so that I can share them with you.
