Vegetable Honey Tofu Stir-Fry Recipe
While in Paris, my mother taught me a new trick for enhancing the flavor of vegetarian meals. She uses honey to caramelize tofu, then deglazes the dish with Maggi (or soy sauce). My parents aren't vegetarian but my mother used to cook a lot of vegetarian dishes for my grandparents who were. My husband Lulu was pleased to eat at my mom's because he got to discover new tofu dishes using these techniques. For this particular recipe, Mom and I sautéed some broccoli and bok choy along with tofu. Delicious!
Since I had to find the best honey available for this dish, it gave me another excuse to explore more Parisian open air markets. I found this wonderful creamy honey from a beekeeper who had come from the south of France to sell his wares. He was very passionate about his products. Lulu and I sampled several kinds, which were all fabulous. We got an absolutely delicious education in honey and brought many jars back with us.

Healthy Grapefruit and Bok Choy Salad Recipe
I felt like making a low-fat salad today because my husband Lulu and I have been diligently working out every day. I bought beautiful pink grapefruits at our local market, so I used the sweet and slightly acidic fruit in the salad. Bok choy and roasted bell peppers rounded out the flavors and textures of the dish. I finished it with a tahini and miso salad dressing that really bound the flavors together.
Even though the meal was low in calories, it was so flavorful. The salad nicely complemented the grilled cod and soy gluten I prepared for Lulu and me. The best part is that even though he is a vegetarian and I eat meat, we were able to share a meal together.

Choy Sum with Oyster Sauce
Choy sum (also known as Chinese flowering cabbage) is a very quick and easy vegetable to cook. I pan-steamed the greens for only a few minutes to maintain a bright green color and paired them with an oyster sauce mixture. Of course, I also had to modify the recipe a bit for the strictly vegetarian diet of my husband Lulu, but the method is exactly the same.
You can serve them as is or with a sauce of your own. It's a healthy and flavorful way to open a meal. I've had it often that way at dim sum restaurants. In fact, it's usually one of the few vegetable dishes offered. With this recipe, you can have it at home, without the dim sum prices!

Asian-Style Red Rice with Mixed Vegetables Stir-Fry
My uncle (the one who likes angel hair pasta) has been trying to convince me and Lulu to switch to red rice. Red rice is unpolished rice. It is short-grained, non-glutinous and has a maroon-red color. I've been giving Lulu brown rice with his meals for health reasons, but apparently red rice has a greater source of vitamin B, fiber and iron.
Cooked red rice has a nutty aroma and is a lot chewier than regular white rice. Just make sure you cook red rice slightly longer than any other rice, such as brown rice.
I stir-fried the rice with some mixed vegetables to enhance the flavors. I added edamame for extra proteins. It's the perfect side dish for poultry or steamed fish.
