Chickpea Soup Recipe Recipe

Chickpea Soup Recipe

08.15.13 by Jackie

I had a lot of leftover soaked chickpeas after making chole (spicy Indian garbanzo beans), so I prepared a simple chickpea soup. I added potatoes that are invading part of our garden now, onions, a touch of lemon and whatever vegetables I was able to find in the kitchen (frozen corn, carrots and roasted red bell peppers). The result was surprisingly fabulous, especially since it's gluten free, dairy free and low fat. You could sprinkle a few Parmesan shavings for added richness if you like, but since there’s no photographic evidence, I’m going to say I didn't!

I prepared the chickpea soup with the idea that it was going to be for baby Aria, but all the grown-ups in our home enjoyed it just as much as she did. She's old enough to eat meat, fish and other solid carbs but I still prepare soups for her several times a week to ensure she doesn't go too hungry. According to my husband Lulu, she's plenty chubby but I guess through a mommy's eyes, there's always the fear of not providing enough for your baby.

Homemade Falafel Recipe Recipe

Homemade Falafel Recipe

06.11.12 by Jackie

The weather has been so pleasant in the Bay Area this weekend that I thought it would be nice to have something fun and refreshing for dinner. We haven't had falafel sandwiches in a while, and since there are so many vegetarians in my house, it was a perfect choice. Other than the falafel themselves, all that was required to prepare a full dinner was a little yogurt (Tzatziki) sauce, diced tomato salad and some pita bread.

To make the falafel I used a combination of fresh fava beans, canned chickpeas, pistachios, fresh bread and a few spices. We prepared a large number, stored a few in the freezer and deep-fried the rest. The key to light falafel is to coarsely chop the ingredients as opposed to blending the chickpeas too smoothly.

I served the meal family style with mini pita bread pockets. Everyone got to put their own sandwich together, which was half the fun. It was absolutely delicious and the preparation was almost effortless.

Red Hummus with Sun-Dried Tomatoes Recipe

My husband Lulu is still heartbroken that the Giants beat the 49ers in the NFC Championship Game last weekend, but our party for the Super Bowl is still on. At least I think it is. I'm planning on serving a lot of finger foods and this red hummus will be part of our tasty feast.

Though it's bursting with flavor, hummus can look a little dull, so I spiced it up with chile oil and sun dried tomatoes. The preparation is fairly simple and doesn't require more than a few ingredients, such as garbanzo beans, lemons, oil and of course sun dried tomatoes. Roasted or pickled garlic would be great here as well, but since we're going to be entertaining, I decided to omit it.

What are your plans for the Superbowl?

Moroccan Inspired Chickpeas Recipe

Moroccan Inspired Chickpeas

09.08.10 by Jackie

After the interview with Las Vegas Chef Pinisetti, I was determined to try out his version of harissa. We made a batch over Labor Day Weekend using red chiles from the garden. I had about 2-3 tablespoons leftover that I didn't want to go to waste.

I decided to make a loose interpretation of an Indian dish called chole, where I replaced the garam masala, ginger garlic paste and amchur (dried mango powder) with Moroccan flavors. I added the leftover harissa to the dish and made a spicy cream cheese sauce to season the chickpeas. Sautéed mushrooms added a "meaty" texture and pieces of preserved lemons, raw onions and tomatoes cut the richness of the dish.

It was such a hit in my house with both the vegetarians and meat eaters that I’m sure to make it again soon. They said it was like a spicy mushroom stroganoff. That wasn’t exactly what I was going for, but they liked it. It’s interesting how flavor combinations can evoke memories of totally different foods. Over the summer I made Earl Grey ice cream and everyone said it tasted like Fruit Loops. Go figure!

Summer Vegetables and Hummus Pizza Recipe

Hummus pizza breaks the traditional rules by using a garbanzo bean spread instead of the standard tomato sauce. I added some Mediterranean ingredients to keep the flavor fresh, such as asparagus, garlic, roasted red bell peppers and artichoke hearts.

It's the perfect recipe for a light summer meal; the few shavings of parmesan cheese is the only sinful ingredient in an otherwise very healthy pizza.
