Asian-Inspired Charred Corn Salad Recipe Recipe

Corn is in season and it's very inexpensive right now. Charring it and turning it into a salad was a great opportunity to use loads of it. I wanted to give it an Asian twist so I dressed the corn with a miso vinaigrette and added diced, ripe mango and some sesame seeds at the end.

During our recent trip to France, I discovered the multiple uses of Le Puy green lentils. These French lentils are ideal when following a vegetarian diet (which is the case for my husband Lulu). Did you know? First, they're packed with protein. They were orignally grown in the volcanic soils of the Puy area, near Clermont-Ferrand in the heart of the Vend region of Western France.

Corn Chowder Recipe

Chowders, like many other Western soups, are thickened with a roux. A roux is a combination of flour, butter and milk. To make corn chowder, just add corn kernels and some diced potatoes for texture. It couldn't be simpler than that!

I think chowder comes from the French word chaudière, which is the name of the pot in which the soup is made. It seems though, that the dish first gained popularity in New England. Traditional chowder is prepared with seafood, but I only had some fresh ears of corn on hand. After making countless corn salads, grilled corn on the cob and desserts, it was time to make some good ol' comfort food for dinner.

Ginger and Cilantro Sweet Corn Salad Recipe

This recipe was inspired by Daddy's friend's wife, Anu Auntie. We had a scrumptious dinner at her home while we were visiting the East Coast last month. The dinner was so delicious, and in particular she prepared a ginger corn salad that was out of this world.  It was sweet, a bit spicy and had very complex Asian flavors. 

Corn is in season and it is very inexpensive right now at my local market. It's only a dollar for 4 ears. I thought it was a perfect opportunity to attempt to recreate this wonderful corn salad. I steamed and grilled the corn, cut ooff the kernels, and seasoned them with a lot of Asian flavors like ginger, soy sauce, cilantro and plum sauce. I hope you enjoy it as much as I did!
