The girls and I have been baking up a storm this holiday season. Here's the recipe for their favorite cookie from this week’s concoctions. We made them without flour, butter or white sugar. The only requirement is the use of a generous amount of peanut butter, brown sugar and a few Christmasy-colored chocolate chips. The result was super gooey, soft and pillowy cookies.

The girls suggested we bake as many varieties of cookies as possible until Christmas Day. I can already tell what my New Year’s resolution is going to be!

Peanut Butter Cookies with Marshmallow Peanut Crumb Topping Recipe

This week, I had the pleasure of spending the entire day with my husband's 9-year-old nephew. Baby Aria found the cutest nickname for him: "Hashee". He loves to bake, so we spent the day in the kitchen.

First, we came up with a game plan. Hashee loves peanut butter, so we baked peanut butter cookies. We topped them with melty marshmallows and covered them with peanut crumb topping.

I’m planning on baking a lot for the July 4th celebrations. What kinds of cookies/pies/tarts/ do you enjoy most during this holiday?

Shirataki Yam Noodles: Noodle Salad Recipe (+ Giveaway) Recipe

Similar to tofu, shirataki noodles can look and taste pretty bland on their own. When I received the package from AsianFoodGrocer.com, I knew I had to enhance the flavor with a sauce. I made a peanut salad dressing that I've used often to flavor tofu, but this time I made it with oyster sauce, miso paste and hot sauce. I added colors to the noodle salad with red bell pepper, pickled garlic, cilantro and green onions. I topped the salad with crushed nori, for a briny flavor and  also sesame seeds and crushed peanuts for texture. We eat with our eyes first, and I think the dark color of the bowl serves as a very attractive contrast to the noodles.

The noodles themselves are very healthy (almost no calories, gluten and cholesterol free). So if you're looking for a light meal, this recipe might be it!

Deconstructed S'mores Recipe (Chocolate Peanut Butter Dessert Cups) Recipe

S'mores are a classic campfire dessert. Generally, only chocolate, marshmallows and graham crackers are necessary for this American treat. As a French person, nothing symbolizes American desserts more than peanut butter, so I had to add some to the dish.

This summer we decided to make use of a little outdoor fireplace on our property (we've been in this home for 6 years; I know we're pretty slow). We spent so many evenings roasting marshmallows and telling scary stories.

I noticed the girls would smear chocolate everywhere, which makes the laundry not so fun. So I served these desserts in verrines (dessert cups). I don't know if making deconstructed s'mores reduced our laundry chores, but it tasted amazing!

Vietnamese Peanut Hoisin Dipping Sauce Recipe (Tuong Goi Cuon) Recipe

We brought summer rolls this weekend for a barbecue potluck. Traditionally, the rolls are served with a sauce made from liver but as a child, I always had an aversion to it. So I made tương gỏi cuốn (which literally translates to "sauce for salad rolls" in Vietnamese) with ingredients that would be appealing to a Western palate.

The condiment is a blend of peanut butter, hoisin sauce, ginger garlic paste, đậu (lentils), coconut water and a few ingredients that balance the sweet and sour taste. For more crunch, the summer rolls are first dipped in chopped peanuts.

Whether you serve this sauce with summer shrimp rolls or veggie spring rolls, it will knock your socks off!
