Aloo Gobi Recipe with Purple Cauliflower and Potatoes Recipe

Aloo gobi is an Indian vegetarian dish made with potatoes (aloo) and cauliflower (gobi). I gave a little twist to the dish by using purple cauliflower and Peruvian purples, which are Fingerling-sized, purple-tinted potatoes. Except for these changes, the recipe remains the same.

The lilac color from the cauliflower slightly fades once it's cooked, but it's still a great addition of color to the Indian dish. It stokes curiosity and brings a new experience to the dinner table. I've made the same recipe using orange cauliflower and sweet potatoes in the past, and it also worked quite well.

Now, I'm off to test carrot purée using Okinawan sweet potatoes and purple carrots. I’ve been having way too much fun with this!

Aloo gobi is an Indian vegetarian dish made with potatoes (aloo), cauliflower (gobi) and Indian spices. I also added peas, tomatoes and the usual ginger garlic paste.

I think aloo gobi was the first Indian dish I ever cooked when I got married. It's very easy to assemble all the ingredients, making it a good introduction to Indian cooking. First, a paste is formed from the spices, and then the vegetables are cooked in the paste until soft. Even though children may not love cauliflower, it is actually a kid-friendly dish. I’ve found it’s a great way to get my little munchkin to eat her vegetables. I just reduce the number of chiles, and serve it with a warm roti (flat Indian bread). Today I made it for us big kids, so I served it with basmati rice.

Jeera aloo masala is a potato dish made with a spicy cumin gravy. Turmeric powder gives the dish its bright yellow color, and along with the heat from the traditional garam masala, makes this dish the ultimate Indian comfort food.

I often make jeera aloo because it's a quick and easy vegetarian meal when I'm pressed for time. There are always potatoes and a container of ready-made garam masala in my house, so it's something I can throw together with almost no effort.

I think we all wish we could give our family healthy meals, but sometimes life intervenes and it's hard to find time to make wholesome food. Having a few recipes like jeera aloo in your culinary arsenal that you can whip up quickly and easily will help keep you from relying too much on high calorie takeout.

Chicken Skewers Glazed with Kiwi Chutney Recipe

Kiwi chutney helps bring chicken to life by infusing the meat with sweet, tangy and spicy flavors. It's an exotic and flavorful twist on what could otherwise be a boring chicken dinner. I served the skewers with raita (yogurt sauce) and some more of the sauce made from the kiwi chutney. For the vegetarians in the house, I deep-fried tofu cubes, placed them on skewers and brushed them with kiwi chutney. Everyone got to share almost the "same" meal, which is very rare in my home.

I got the jar of kiwi chutney pictured below from our friend Laura. It's just one product in a long line of lovely creations that she has shared with us. Laura makes an amazing French marmalade, flavored with French vanilla beans. I don't have the recipe for the marmalade, but last year, she was kind enough to share her recipe for making vinegar on Pham Fatale.

If you don't have a friend like Laura, or can't find kiwi chutney at your local market, you can always try using other sweet chutneys such as mango or tamarind. No matter what, you'll have a tasty new chicken dish to share with your family and friends.

Cumin and Saffron Flavored Butternut Squash Risotto Recipe

If Fall had a flavor, it would be butternut squash. I know pumpkins are the symbol of Halloween, and sweet potatoes are a staple of Thanksgiving meals, but to me, nothing compares to the earthy sweetness and versatility of butternut squash. It works perfectly in salads, soups, side dishes, and, in the case of this risotto, as a main course.

To prepare this dish, I just diced and roasted some butternut squash and mixed it with a pot of risotto I infused with saffron. It's a simple, no frills preparation that really highlights the flavor and texture of the butternut squash.
