Deep Fried Feta Cheese Recipe

This weekend is the Super Bowl, but Lulu and his friends are so disappointed that the Niners didn't quite make it (and with Kyle Williams in particular) that they're threatening not to watch the game. Even though the boys are being such party poopers, I still plan on putting out a nice spread. As they say, the game must go on!

This particular dish is my take on the traditional fare of breaded mozzarella cheese sticks. Instead of mozzarella though, I made my fried treats with raw feta cheese. The cheese is from Redwood Hill Farms, and it is just delicious! It has such a strong flavor and really holds up well to being deep-fried. Unlike mozzarella, feta cheese doesn't melt but keeps a very pleasant firm texture. 



To finish the plate, I drizzled a basil dressing on the appetizers for a contrast of color. For the party, I'll probably serve the fried feta cheese on a large tray, but you could also place a smaller portion as I did on a bed of diced vegetables.

Yorkshire pudding batter contains very basic ingredients that I'm sure are already in your kitchen; eggs, milk, flour and oil (or fat drippings). The final product is greater than the sum of its parts, and there are few things more dramatic than a basket full of Yorkshire pudding.

Food has an incredible ability to evoke memories, and for me, Yorkshire pudding really takes me back in time to my childhood vacations in England. I stayed 2 years in a row at Tracy's house during Easter break in 1989 and 1990. It's been almost 20 years since the last time we met but we've kept in touch ever since. Tracy is an amazing cook, and I have fond memories of her delicious meals. A typical dinner would be roast beef, Yorkshire pudding, some greens and carrots and a wonderful banana mousse. Tracy, if you're reading, send my love to your lovely girls Emily and Alice!

Mediterranean Mini Pizza with Cannellini Beans and Roasted Red Bell Pepper Hummus Recipe

I made a hummus pizza a few days ago and I felt like recreating a sandwich version of the dish with a bunch of Mediterranean ingredients. The problem was that I only had pita bread at home. I could have created a pocket in the bread and stuffed it, but I decided to place the ingredients on top of the pita bread to create a meal that resembled a pizza.

Following the Mediterranean theme, I made a cannellini bean and roasted red bell pepper hummus-like spread and topped it with Greek feta cheese, capers, sun-dried tomatoes, arugula, pickled shallot, black olives and marinated artichoke hearts. For the meat lovers out there, I would add some cubes of lamb kebabs.

I'm sure you've heard of 30-minute meals, but this took me 10 minutes, tops. Try this recipe the next time you're in a hurry. Beat that, Rachael Ray!
