Cannellini Bean Soup with Arugula Recipe

Cannellini bean soup is an easy dish I can whip up in no time. It's also a meal I can be sure everyone is going to enjoy. It's vegetarian, it contains no major food allergens and even baby Aria can eat it easily.

I try to always have fresh greens in my refrigerator. I usually toss them in a simple salad, I also make pesto or use them as garnish for appetizers, pizza and sandwiches. The addition of arugula at the last minute provides color and a peppery flavor to the otherwise fairly bland, pale soup. To ensure the nutrients of the arugula were still intact, I added finely chopped arugula only at the last minute, so it barely wilted in the soup.

Here's a pizza that's not only delicious, but will take you no more than 10 minutes tops to prepare. I used  California Pizza Lavash bread and topped it with colorful elements: turkey bacon and a bit of feta cheese for the base, covered with yellow bell pepper, freshly cut juicy tomatoes, arugula and a drizzle of balsamic syrup.

You can't beat that. Moreover, it's quite healthy (just make sure to control the portions of bacon and cheese).

This weekend we had gorgeous weather. It was our first chance to enjoy the sun and eat outside, so I prepared a wonderful Sunday brunch for the family. The centerpiece of the meal was a chilled soup flavored with arugula and cucumber.

Arugula gives both an attractive color and a wonderful taste to the soup. If you’ve never had it, it tastes like a cross between mustard and hazelnut. I served the refreshing soup with little puff pastry appetizers. Easy, healthy and delicious.

Good bye 2011, hello 2012! I'd like to wish the happiest of New Years to you and yours. Ours is starting off great with my little baby girl. That also means new resolutions and mine this year is to lose all the baby weight. I'm determined to be healthy after 9 months of indulging in decadent meals. To start off on the right foot, today I made a healthy pesto pasta using arugula, sunflower seeds and Parmesan cheese. I love cooking with arugula; it tastes like a cross between mustard and hazelnut with a hint of pepper. It’s a nutritious meal that is healthy and filling.

Rocket Salad with Granny Smith Apples (Mixed Green Salad Recipe) Recipe

My husband Lulu and I are finally back home from a long month in Paris. It's good to be home and see the girls again, whom we missed a lot. Lulu got the camera out and showed the family pictures of the wonderful Parisian monuments and delicious food we had.

Over the next few days, I'll be sharing with you the dishes I made on our trip. This particular one is a very simple roquette (also known as rocket or arugula) and apple salad. I paired it with freshly cracked walnuts and pecorino pepper vinaigrette. The crunch and the hint of tart and slight acidity from Granny Smith apples works wonders on this salad. Bon appétit!
