Red Kidney Bean Tostada with Nopales Recipe

Tostadas are deep-fried corn tortillas presented in the form of a flat, open-faced sandwich. I made a slightly smaller version for appetizers, called tostaditas. You can fill them with anything you like; I played with different textures and flavors, and settled on something Lulu had while we were on vacation in Cancun. I added grilled nopales (segments from prickly pears), corn and tomato salsa and topped the appetizers with mini red kidney bean burgers, crumbled queso fresco and Mexican sour cream both from our friends over at Karoun Cheese

I love the fact that you could eat these in one-to-two bites. You can feel both the freshness and spiciness from the vegetables and the warmth and crunch from the tostada. I served them with little wedges of sweet limes from our garden to cut the heaviness of the cheese and sour cream. It's pure piece of heaven for  the mouth. Enjoy!

Bean Curd Roll Recipe Recipe

Bean Curd Roll Recipe

01.02.13 by Jackie

I hope you all had a fun-filled New Year's Eve with your friends and families. What did you do to ring in the New Year? We had some family time at home. It may sound lame, but we watched "Murder on the Orient Express,"trying to solve Hercule Poirot's investigations (it’s so much easier when you’ve seen the movie like a dozen times ) while enjoying all the baked goods the girls and I have been concocting all week.

2012 was an incredible year for me. I feel so blessed and lucky, watching my daughter grow into an adorable toddler. And then there’s the publication of my first cookbook. I am so grateful for all the blessings that I have in my life. Thank you so much for your love and support. Here’s to making 2013 as unforgettable as 2012!

Back to today's dish. The girls' resolution is to lose as much weight as I did last year when I was working off my baby weight. I'm helping them by cooking healthy, yet still flavorful meals. One such concoction is today’s recipe: light red kidney bean patties wrapped in crispy bean curd. The filling is made of mashed kidney beans with panko breadcrumbs. The legume provides a sufficient amount of protein so the girls have enough energy throughout the day and the crispy outer layer provides a pleasant contrast of texture. For a healthy and complete meal, serve it with some brown rice and a dash of soy sauce. Enjoy!

Gourmet Red Potato Salad Recipe Recipe

Gourmet Red Potato Salad Recipe

07.07.10 by Jackie

This potato salad recipe is unique in that it contains no eggs. My husband Lulu doesn't like mayonnaise and one of his sisters is allergic to eggs, so I made an eggfree salad dressing using chipotle peppers, lime, cream cheese, sour cream, roasted Roma tomatoes, roasted red bell peppers, red wine vinegar and pickled garlic. I used wax potatoes from our garden which add color to the salad. To the potatoes, I added red radishes, celery, sun-dried tomatoes, red kidney beans, pine nuts and a myriad of herbs. It’s perfect for a summer picnic!

Wild Rice and Orzo Salad with Maple Vinaigrette Recipe

This dish is really three recipes in one. I combined my wild rice, kidney bean salad and orzo pasta salad recipes together to make a light and healthy meal. The maple vinaigrette helps tie everything together.

I usually make orzo pasta salad for parties and picnics, but we've been having a heat wave here and we all felt like eating something cool. The addition of kidney beans for protein and wild rice for fiber makes the dish more of a complete meal. If you have some leftover roast chicken, you can dice or shred it and add it to the salad as well.
