Jumbo Shrimp Stir Fry Recipe Recipe

Jumbo Shrimp Stir Fry Recipe

04.16.14 by Jackie

This is, in my opinion, one of the most decadent seafood dishes I like to prepare whenever we host a fancy dinner party. We recently did, so I selected jumbo shrimp, dried black mushrooms, broccolini, beech mushrooms, King oyster mushrooms and green onions. I learned the tricks of the trade from Aunt Danielle. As I've mentioned before, Aunt Danielle is an amazing cook; she used to run a successful Vietnamese restaurant in the early 90s. She taught me a lot of staple Vietnamese dishes to cook when I first got married.

The secret is to use the corals from the inside of the shrimp heads to make the flavorful sauce.  In addition to this, I made the fragrant sauce called "satế," with garlic, galangal, soy sauce and plenty of fresh chiles. It's quite labor-intensive but well worth it. If your guests like seafood, they should be prepared for a feast!

Picnic Quinoa Salad Recipe Recipe

Picnic Quinoa Salad Recipe

04.14.14 by Jackie

My husband Lulu, baby Aria and I had a delightful time at San Gregorio beach this weekend. He took care of most of the food; I only prepared a salad. For easy transportation, I cooked quinoa and pre-seasoned it with a salad vinaigrette. I also added carrot, corn, broccolizucchini, sun-dried tomatoes and sweet cheese.

Lulu was so thoughtful and took care of the rest. He woke up early, took care of our new puppy Ernest, went groceries shopping, bought a baguette and a wonderful array of cheeses (manchego, out-of-this world truffle cheese, goat cheese, etc.) and packed the trunk of the car with our picnic bag with plates and cutlery. But I think the most beautiful surprise was when we reached the beach. He gave Aria a gift of a lovely beach sand toy set and bubble kit. You should have seen the excitement in her eyes; it almost made me teary.

It was such an incredible day: the weather was gorgeous; it was slightly overcast and the sounds of the waves were very pleasant. The view was spectacular with a beautiful soft sand beach and dunes to the right and a bridge to the left, complete with a creek underneath and a tunnel worn into the rocks nearby. We also enjoyed good food and stayed there for a few hours. My favorite part was watching Lulu and Aria building sand castles. Loved it!

Black Mushroom Tofu Recipe Recipe

Black Mushroom Tofu Recipe

04.02.14 by Jackie

In Vietnamese, this tofu dish is called tàu hủ xào nấm đông cô. This particular variety of mushrooms is delicious. Once re-hydrated, they have a fleshy, plump and even meatier, chewier texture than fresh shiitake mushrooms.

The delicate part of this preparation lies in soaking the mushrooms. You could soak them in cold water overnight or, if pressed for time as I was, re-hydrate them in warm water for about 1 hour. I saved the flavor-packed soaking liquid and made a thick sauce to accompany the tofu. I don't prepare this dish very often because one of the ingredients can be a little pricey, but it is sooooo tasty!

In order not to serve a mostly colorless dish, I included bright green string beans.

Quinoa Burger Recipe Recipe

Quinoa Burger Recipe

03.31.14 by Jackie

Today is Meatless Monday, so I prepared vegetarian quinoa burgers for the occasion. I flavored them with broccoli and triple cream cheese. The burgers were so flavorful and I felt in veggie heaven; not one second did I crave the meat.

The reason behind the deliciousness of the burger is the creamy and velvet cheese. The broccoli provided a great contrast of color and the necessary greens for a balanced diet.

Beet Quinoa Recipe Recipe

Beet Quinoa Recipe

03.20.14 by Jackie

Quinoa is a fabulous side dish that contains no gluten. This gives you other options besides pasta and rice. Last night, I prepared it with beets. It added a beautiful color and subtle sweetness. I usually like to add beets to plain, bland food; they revive the most boring dishes and aren't complicated to cook. Simple shredded beets cook extremely fast.

Baby Aria is so talkative now and her thirst for knowledge is growing everyday. She always asks what she's eating. She loves how "funny" the word quinoa sounds and she adores beets. I bet she's going to request more of this dish in the near future!
