Clementine Chocolate Parfait Recipe Recipe

I made clementine mousse using fruits from our garden. The zest is amazingly fragrant. The exterior has such a deep orange color, I thought it would be perfect dressed as a parfait paired with French chocolate cookies we bought in Normandy.

My husband Lulu and I brought a lot of delicious French food back home from our recent trip to Europe. The cookies in the dish are called "La Mère Poulard" chocolatine cookies. They are specialty cookies from the Mont Saint Michel region of France. My parents took us there on New Year's Day. It's a rocky tidal island located in Normandy, topped with beautiful shops and a church. It’s a UNESCO World Heritage Site.

While we were there, we had the region’s typical crêpes and of course brought back a few packs of cookies. If you’re in France and you have time, I recommend taking a visit.

Homemade Tangerine Kumquat Marmalade Recipe Recipe

Every year, we make preserves with the fruits from the garden. As I told you in a recent post, I had it all planned out so that nothing would go to waste and was determined to create Orangina soda. I used the kumquat pulp for the syrup of the drink and used all the kumquat rind for marmalade. To repeat the same flavors of the soft drink, I added tangerine to the marmalade as well. To make the marmalade a bit fancier, I added some vanilla beans and vanilla extract at the end.

Making marmalade is labor intensive, so gather some friends and family to get through the process. Rest assured that your efforts will be rewarded. We cooked and canned 13 pounds of fresh kumquats. If sealed properly, you can keep the jars of marmalade for a year. Good luck holding on to it that long though. The girls have already gone through two jars! The sweet fragrance of the kumquats and vanilla is intoxicating. Spread a little (or a lot) on a slice of buttered toast, pour yourself a cup of tea and enjoy. It's the perfect way to start the day!

Roasted Beet and Corn Salad with Tangerine Vinaigrette Recipe

I love beets. They have a wonderful sweetness and texture. I sometimes cook beets into hot dishes, but my favorite way to enjoy beets is in a simple salad. For this particular recipe, I paired the beets with a tangerine vinaigrette with tangerine-infused oil and tangerine juice. The vinaigrette brightens the flavor of the dish and acts as a nice complement to the flavor of the beets. I also added corn to create a contrast of texture and color. The result is a salad with some very bold flavors.
