Madeleine Cookie Recipe (Halloween Dessert) Recipe

My husband Lulu loves madeleines. It always reminds him of our trips to Paris. I haven't made any in so long, I thought it was time to surprise him with a fresh batch. I made the madeleines Halloween-friendly by giving them a green color and decorating them with Halloween-themed designs. Pandan is my green food color of choice, and I've flavored and colored a lot of French desserts with it in the past.

Most of the madeleines I've had in America are flat, dry and not very tasty, so I wouldn't be surprised if you're not a fan. The authentic French version must have "the bump" (follow the recipe and you'll find out the secret for fool-proof madeleines) to be truly fluffy and tasty. It creates a light and delicate gourmet cookie that is so pleasant with a hot cup of tea. Not to forget the kid-friendly part, I decorated the madeleines with sprinkles and chocolate chips and wrote spooky messages that for sure will satisfy both big and little kids! And Lulu is most definitely a big kid. He still loves taking his kid sisters trick-or-treating so that he can raid their bags of candy later on. Maybe with these madeleines in the house, he'll stop stealing their sweet treats!

Superbowl Sugar Cookies Recipe

Superbowl Sugar Cookies

As a French girl, it’s probably not surprising how ignorant I am about American football. My husband Lulu has tried several times to teach me the rules, and failed miserably. I'm trying hard, I promise!  At the very least, I can participate in the fun by whipping up some delicious snacks to enjoy during the game.

Today, I made batches of sugar cookies using the colors of both teams. I used black and yellow for the Steelers and green and yellow for the Packers. The black, yellow and green cookie doughs were respectively flavored with semi-sweet chocolate, Meyer lemon and pandan paste.

I remember a few years back that the Steelers were participating in the Superbowl as well, so they must be a good team. Lulu's rooting for them, but with these cookies you can represent yourself no matter which team you're cheering for. I’m also going to post a list or two this afternoon of other tasty treats that you can serve at your Superbowl party, so stay tuned for that. I hope you enjoy the food and the company this Sunday!

Witch Finger Cookies (Scary Halloween Food) Recipe

This recipe gives “finger food” a whole new meaning. My 1st-grader sister-in-law is going to participate in the Halloween parade at her school, and I thought it would be fun to bring some scary treats to share with her classmates. After deliberating with the munchkin, we decided to make finger-shaped cookies.

To start, I made the first batch of cookie dough with a few drops of pandan extract to give the cookies a green color. My munchkin helped me out shaping the fingers but we realized they were shaped way too big as they expanded after baking. I exclaimed: "Those are Shrek's fingers!" to which my little one responded: "Why would you chop off Shrek’s fingers?!?!". After calming her down, we settled on calling them “witch” fingers. I made the second batch much smaller with less pandan to make it more realistically like a witch's skin (I'm just guessing since I've personally never met one). The fingernails are made of candied blanched almonds and the fingers are dipped in fruit preserves to imitate blood.

The finger cookies look very realistic, so I don't know if they're appropriate for 6-year-olds. I’ll tell you tomorrow what the reaction was.

Pandan Chocolate Chip Cookie Recipe Recipe

Pandan cookies always intrigue the guests who come to our house. The green color from the pandan paste makes the cookies very original, and after the first bite, our guests are amazed at how great they taste. Daddy's friend, who lives in Minnesota, loved them so much that I decided to send a basket of two dozen cookies to him as a care package.

When I was a child, Maman would use pandan leaves to flavor steamed jasmine rice. It's also used in many Vietnamese desserts, such a rau câu. That inspired me to try using pandan in Western dessert recipes.

I often fuse the ingredients of one cooking tradition with the recipes of another. It’s a great way to create new dishes. In fact, the very first recipe posted on PhamFatale.com was for pandan cookies. In that recipe, I used pistachios and white chocolate chips. Both are great, but I think the cocoa in semi-sweet chocolate pairs especially well with pandan. Changing ingredients and coming up with new dishes is a big part of the culinary journey I've been sharing with you for a year and a half. After all, that's what cooking is all about. The history of cooking is really the history of the migration of people from one place to another. As they traveled, they adopted and adapted the local cuisine, creating many of the classic dishes we enjoy today. I hope you enjoy my small contribution to this tradition.

Halloween Pandan Ricotta Cookies with Carrot Icing Recipe

This recipe was inspired by a recipe that Giada DeLaurentiis made on her cooking show Everyday Italian.  Ricotta in cookies may seem strange, but it makes the cookies oh-so moist and chewy. Giada made lemon ricotta cookies with a lemon glaze, but I thought it would be fun to modify the recipe for Halloween.

I added pandan to the batter to give the cookies a spooky green tint. After baking, I covered the cookies with a carrot glaze. The orange color really evokes Halloween. To finish the cookies, I sprinkled on some orange, green and black Halloween sprinkles. 

This Halloween, while the kids are over-loading on sugar from too many cloyingly sweet candy bars, the grown-ups can have something to enjoy, too.
