Spicy Udon Noodle Soup Recipe

The spicy paste in this coconut udon soup provides not only  the kick, but also most of the flavor. It's made of miso paste, a lot of red Thai chiles, Thai basil, sesame and garlic. The rest of the preparation is very basic. A mix of Asian vegetables such as straw mushrooms, sweet baby corn and bok choy are boiled in vegetable broth. At the last minute, fried tofu, pre-cooked fresh udon noodles and coconut milk are added to complete the tasty soup.

The temperature is finally dropping in the Bay Area, which makes hot soup so soothing!

Gazpacho Soup (Chilled Tomato Soup Recipe) Recipe

Gazpacho is a refreshing first course I  just had to make before the summer ended. The preparation is very easy. Cucumber, roasted red bell peppers, onions and fresh tomatoes are blended together. I flavored the cold soup with garlic, lemon, tarragon, a bit of agave nectar and extra-virgin olive oil. To provide a touch of saltiness, I topped the soup with oil-cured olives.

I served it chilled with "oeuf à la coque"-style quail eggs ("soft-boiled eggs" in English). Accompany it with lightly toasted noor thin bread from the folks at California Lavash and you'll have a truly fun summer dish!

Cucumber Soup Recipe

My husband Lulu gathered so many Marketmore cucumbers from our vegetable box over the weekend that our family's had to work hard to keep up. I made the family's favorite cucumber sandwiches and once we had our fill of those, I made a big bowl of cold cucumber soup. I realized that cucumbers can taste pretty mild, so I added smoked blue cheese and plenty of fresh herbs to ampup the flavor. 

Planting your own vegetables can be so rewarding, plus I've noticed that homegrown cucumbers are so much more fragrant than the one from the market. I could actually smell the soup in the kitchen from my front door!

I still have a few cucumbers left from this batch, so I'll probably make some raita (Indian yogurt sauce) for tomorrow. Do you have any suggestions?

Cold Cucumber and Arugula Soup Recipe Recipe

This weekend we had gorgeous weather. It was our first chance to enjoy the sun and eat outside, so I prepared a wonderful Sunday brunch for the family. The centerpiece of the meal was a chilled soup flavored with arugula and cucumber.

Arugula gives both an attractive color and a wonderful taste to the soup. If you’ve never had it, it tastes like a cross between mustard and hazelnut. I served the refreshing soup with little puff pastry appetizers. Easy, healthy and delicious.

Gluten Free Tofu Ravioli Soup Recipe Recipe

Tofu ravioli soup is a great first course. The soup is very light and as a bonus, it's gluten free. The twist is that thin slices of tofu are used as the wrapper for the ravioli. I filled the gluten-free raviolis with pre-cooked mushrooms, mung bean paste and jicama. I served them phở-style, meaning that I brought the ravioli to the table in bowls and then covered them with boiling-hot broth just before serving.

I learned the recipe from the lovely Chef Theresa Lin while attending the top 100 Chinese Restaurant Show in January in San Francisco. She's a hostess of several Chinese-language TV and radio programs around the world. She also was the executive food designer of the hit film "Eat Drink Man Woman," which garnered an Oscar nomination as Best Foreign Film. I got the opportunity to spend some time and have lunch with her, and in a very brief amount of time I learned quite a bit about Chinese cuisine. She is such a sweet lady and let Lulu and me taste her delicious food. This was one of the dishes she featured, and we loved it. You will too!
