Chicken Lavash Soup Recipe (Tortilla Lime Soup) Recipe

As a child, Maman would always tell us kids not waste food; it's "tội chết" ("dreadfully sinful" in Vietnamese). Now that I'm an adult, I intend to follow in her footsteps and teach the same values to our future children. Whenever there are left-overs, I try to come up with creative ways to use them. Today, I had left-over chicken broth and roasted chicken, so I combined them to make a hearty chicken soup. I had whole wheat lavash on hand, so I decided to slice it into strips and use it as I would when making tortilla soup. The lavash also made a good thickening agent in the soup.

To the large pot of soup, I added left-over shredded roasted chicken, tomatoes, tomato paste for a little tartness, jalapeños for a little heat, lime juice, cumin, avocado and some edamame beans for texture. The lavash soup is a hearty, tasty dish that makes a complete meal that's a hit even with the kids. Well, at least the non-vegetarian kids in my house!

Korean Tofu Soup with Rice Cakes Recipe

Rice cakes are made from glutinous rice flour. We buy them at the Korean market. They're a great alternative to bánh phở or ordinary noodles. What I love most about this product is  that they're made with no additives or preservatives. They're a favorite at our house. The texture is very nice, and works well in a simple, clear vegetable broth. If you're looking for a healthy meal, this is not your average diet cabbage soup.

Vegetarian Lentil Soup Recipe

Vegetarian Lentil Soup

11.05.09 by Jackie

Sunny had an orthodontist appointment today and she got tighter elastic bands on her braces. The poor thing couldn't chew solid foods. I had to make her something that wouldn't cause any pain, and after looking through the pantry I decided to make her a bowl of hot lentil soup. She loves hot and spicy foods, so I added some leftover harissa "ice cubes" (see tips) from the freezer to the soup to give it a kick and to complement the earthy flavors of the lentils.

You'll enjoy this soup even if you haven't had recent dental work done. It's a great cure for the cool weather we've been having as well.
