Cucumber Dill Salad with Tzatziki Dressing Recipe

I wanted to prepare a simple salad for dinner this evening, so I made a cucumber salad with a really easy to make tzatziki dressing.

Prepping the cucumber takes only a few steps. I wash, chop, salt and pat dry the cucumber slices and they're good to go. The tzatziki sauce is made of dried mint, dill and yogurt and is seasoned with salt and pepper. If you want to make it extra rich, you can add some sour cream or crème fraîche. Mix them together and you're ready to serve. That's it. Easy never tasted so good.

If you're ever fortunate enough to go to Paris, you are bound to walk by many sidewalk cafés, brasseries, bistros and the like. As ubiquitous are the chalkboards that guard the entrances to these eateries, calling out the specials of the day. On almost all of them, you will find salade niçoise.

This is not the tuna salad that one traditionally finds in America, slathered in mayonnaise and sweet pickles. Salade niçoise hails from the Côte d'Azur; region of France, and is named after the city of Nice. It is a combination of tomatoes, potatoes, green beans, eggs and canned tuna packed in oil. It is typically topped with anchovies and Dijon vinaigrette.   Like many French dishes, the name may evoke visions of elegance and glamour, but in reality the dish is the result of the vegetables and proteins available in that region of France. Put another way, it's really just a fancy way of describing a tossed salad from Nice.

I personally love this dish, because it is easy to make and perfectly captures the flavors of  the Mediterranean. It won't replace the traditional American-style tuna salad, but instead provide you with a healthier alternative.

Red Cabbage Salad with Poppy Seed and Caramelized Onion Vinaigrette Recipe

The crunch, the color; everything about this dish screams summer. Shredded red cabbage is a real eye grabber, and the vinaigrette helps brighten up the flavor of the dish. I flavored the vinaigrette with mustard, pickled garlic, sugar and a little sour cream for a velvety texture. I was inspired by my butter chicken recipe, where I fried onions, drained the oil, and mixed in sour cream. You don't have to add sour cream to the vinaigrette, but otherwise it's too healthy.

Savory Goat Cheese Panna Cotta with Beluga Lentil Relish (Panna Cotta au Chevre et sa Macedoine de Legumes) Recipe

Panna cotta de chèvre frais et sa macédoine de légumes is a summery dish. It was such a sunny day today in the Bay Area, so I decided to make something refreshing and light.

In case you don't know, panna cotta is a firm jelly. It can be either be savory or sweet. Instead of using gelatin, I used agar for the vegetarians in the house. I paired the panna cottas with mixed vegetables and lentils to get a balanced meal with proteins, dairy and veggies.  

I served them in little verrines. Verrine is just a fancy word for glasses but they are the latest trend in French cooking. If you host a buffet-style dinner, it's the ideal way to run a stress free party as this dish can be prepared in advance.
