BonjourToday (February 2nd) is a popular French celebration called La Chandeleur (also known as the Christian holiday, Candlemas). On this day in France, we eat crêpes--a lot of crêpes. And there's nothing easier than preparing the flat "pastries" appreciated by foodies all over the world. I've attached the video on "How to Make Perfect French Crêpes" so you can see how simple the preparation is.

Glazed Pearl Onion Crepe Recipe

After watching the "How to Make Crêpe Batter" tutorial,  you'll see how fairly basic it is. As I mentioned in the video, I first learned how to make crêpes in kintergarten back in France, and I haven't forgotten since then. After a little practice, you'll be able to adjust the quantities of liquid (milk, alcohol or citrus juice) by eyeballing until the perfect consistency is reached (see video). 

You can fill the crêpes with many possible ingredients. This savory version contained pearl onions that I glazed in Marsala wine, brown sugar, butter and truffle balsamic vinegar. It wouldn't be the same without a bit of cheese, so I started with a thin layer of Gruyère and topped the onions with a sprinkle of French feta.

I make crêpes very often. I've done it so many times since I was a kid that I bet I could prepare this batter with my eyes closed. The only difference in today’s recipe is that I made them thicker and fluffier. A crêpe soufflée is basically a regular crêpe batter folded with egg whites. This couldn't be easier!

I flavored the dessert with fig spread, fresh figs and a dollop of whipped cream. To provide a great contrast of texture, I sprinkle crushed honey-roasted peanuts on top. Give this simple French sweet treat a try; I promise you'll be in heavenly dessert bliss!

Ultay Pultay Recipe (Indian Chana Pancake Curry) Recipe

Ultay pultay is what my father-in-law (I call him "Daddy"), who's a vegetarian, considers a festive dish. This dish is composed of thin, firmly pressed chickpea pancakes soaked in spicy gravy. The cooking time was a bit a long but seeing Daddy enjoy his meal was so rewarding. 

I learned to make ultay pultay from Lulu's paternal grandmother's sister. The entire family calls her Muni Baji in Urdu, which translates to "little sister" in English and she's indeed the youngest of a large brood; Lulu's grandmother was the eldest.

It was a lot of fun learning the curry dish from Muni Baji. She told me a lot of stories about her life in Hyderabad. For instance, the gravy calls for fried onion paste and back in the day, there was no blender so it was puréed by hand!
