Here's a new take on the American burger classic! Spice up your traditional barbecue menu by adding flavors from India.

Masala burgers would make a perfect addition to your spread this Memorial Day weekend. They're a welcome change from regular beef burgers. I've made fusion burgers in the past, including keema burgers made with Indian-style ground beef. This time, I flavored hamburger patties with garam masala, ginger garlic paste, turmeric and red chili powder. I also changed the condiments; I substituted kachumbar (Indian salsa), my own concoction of raita (Indian yogurt sauce) and tamarind sauce for the ordinary ketchup, mayo, mustard and pickle relish.

Aloo Gobi Recipe with Purple Cauliflower and Potatoes Recipe

Aloo gobi is an Indian vegetarian dish made with potatoes (aloo) and cauliflower (gobi). I gave a little twist to the dish by using purple cauliflower and Peruvian purples, which are Fingerling-sized, purple-tinted potatoes. Except for these changes, the recipe remains the same.

The lilac color from the cauliflower slightly fades once it's cooked, but it's still a great addition of color to the Indian dish. It stokes curiosity and brings a new experience to the dinner table. I've made the same recipe using orange cauliflower and sweet potatoes in the past, and it also worked quite well.

Now, I'm off to test carrot purée using Okinawan sweet potatoes and purple carrots. I’ve been having way too much fun with this!

Mattar Tofu Paneer (Indian Tofu Recipe) Recipe

Mattar paneer is a dish made with peas and Indian cheese. This time, I decided to make the same flavorful dish, but with fewer calories. To accomplish this, I substituted firm tofu in place of traditional paneer cheese.

I fried cubes of tofu the same way as I would paneer, then simmered them in a delectable, creamy onion and tomato curry sauce with green peas. If you’re looking to make a foray into veganism, this is the perfect way to start (see tips).

Of course, if - like my father-in-law - you feel cheated by the absence of golden chunks of fried cheese, you can always try the traditional mattar paneer recipe. I won’t tell!

Lamb Kebab Recipe

These lamb kebabs are called kofta kebabs. Unlike Greek lamb gyros, the patties are pan-fried instead of grilled. I mixed the lamb with garam masala, ginger garlic paste, chiles, ground almonds and bread, which gives the kebabs a denser texture. The finished dish is very refreshing, served with roasted vegetable couscous or pita bread and hummus.

As I think I've told you, lamb is probably one of my favorite meats, but I don't cook it very often because of the high cholesterol. If you're serving lamb for a party, I would advise you to season the meat well with lots of spices to cover the strong, distinct smell that some people might not like.

Grilled Tandoori Chicken Recipe

Summer is almost over! It’s hard to imagine, but school starts next week for the girls, so I thought I'd use the barbecue one more time before storing it until next season. I marinated chicken breasts in tandoori sauce (I removed the skin because Lulu's aunt who’s visiting doesn't like it).

A generous amount of plain yogurt is necessary to ensure that the meat is moist. The traditional spices from garam masala are also used (cumin, coriander, red chile and other spices). I grilled the chicken breasts for about 10 minutes and the meat was ready to be served. It’s actually a pretty stress-free recipe if -like me-, you have a ready-made jar of garam masala in your pantry.
