Pan-Fried Banh Tet Recipe

Hoa Tâm, a family friend, came to visit a few days ago and she gave us a very useful tip on how to avoid bánh tét food waste after the Lunar New Year celebrations. What is bánh tét you ask? It's a Vietnamese savory rice cake (at times sweetened with bananas). It's made primarily from glutinous rice, which is rolled in a banana leaf into a thick, log-like cylindrical shape, with a mung bean or mung bean and meat center, then boiled. It's a must-have traditional food during Tết, the Vietnamese Lunar New Year in Southern Vietnam. We've been given a lot of the logs this season; it's a way to demonstrate the importance of rice in the Vietnamese culture. I told Hoa Tâm my fear that we'd have a lot of leftovers and didn't want to waste all the food. She then give uswonderful trick; if you have a lot of these rice cakes as e do, look no further!

Simply slice them and pan-fry them. Once crispy, drizzle with nước mắm chay (if you're a vegetarian) or fish sauce. It's as simple as that. Thanks, dear Chi Hoa Tâm!

During our trip to Paris, my husband Lulu indulged in many cheeses and French desserts. Now that we're back home, we're back to healthier meals. In keeping with that spirit, I prepared a tofu dish with young bamboo shoots, carrots, baby corn and cucumbers.

Fresh bamboo shoots provide a meaty, slightly crunchy texture and incredible subtle flavor to the dish. If you happen to find this unusual ingredient fresh at your local Asian grocery store, be sure to give it a try.

Vietnamese Vegetables with Ginger (Rau Muong Xao Gung) Recipe

Vietnamese cuisine boasts many dishes that highlight fresh ingredients in a healthy manner. Rau muống xào với gừng (Vietnamese pea tendrils sautéed in ginger) is an excellent example of this.  The dish is incredibly simple; the pea tendrils are blanched and then flavored with ginger and a little turmeric for color. I made it recently for my uncle who was visiting us and is a practicing Buddhist, which is why the recipe does not call for onions, shallots or garlic. Don’t worry though; the dish is only light on calories, not flavor.

As a child, our typical Vietnamese family meals were composed of individual bowls of rice, meat, seafood or tofu, a bowl of canh (a clear broth soup), a vegetable side dish and a dipping sauce. I always looked forward to a bowl of rau muống, served with a soy sauce and ginger dipping sauce called mắm gừng. If you have trouble getting your family to eat their greens, give this dish a try. It worked on me!

Kale with Homemade Pickled Ginger Recipe

Kale with pickled ginger is one of the healthiest and tastiest ways to get a meal packed with iron. I made my own pickled ginger and an Asian-inspired salad dressing with lemongrass, miso and sesame oil. The result is the perfect condiment for boiled kale.

The reason I've been trying to make iron-rich meals lately is that my sister-in-law, Sunny, was diagnosed with iron deficiency. It's a fairly common problem that primarily affects women. She had trouble with the iron pills, so it was suggested to us that we make her foods that are rich in iron. Because of this, I've been trying to cook more with kale.

Salmon Teriyaki Recipe

Salmon Teriyaki

Fish can seem challenging to make at home but, pavé de saumon caramélisé (salmon teriyaki) is an ultra-easy recipe. All you need to do is ask your fishmonger to prep the salmon in advance for you. I made a teriyaki-inspired glaze to go with the salmon and served it with rice.

If you've been following my culinary adventures since the beginning of Pham Fatale, you may recall that I posted one of Lulu's favorite tofu recipes, called "sesame tofu caramelized with agave nectar and wasabi". This vegetarian recipe was inspired by this salmon dish. I hadn't made it in a long. tine, but my mother-in-law brought home some beautiful salmon fillets, so I told her I'd be in charge and surprise her. She loved it even though she said I should have tripled the amount of wasabi paste (she loves spicy food). You're welcome to follow her advice if you prefer it really spicy, but I'm a wimp, so I'll stick to just a half teaspoon...
