Mediterranean Pinwheel Sandwich Recipe Recipe

These colorful pinwheel sandwiches are loaded with Mediterranean flavors. Fresh and roasted vegetables are brought together with hummus and pleasingly tart capers. The cabbage and carrots were also briefly pickled in lemon juice and a little sugar to add a little brightness without sacrificing their crunch.

I made these pinwheel sandwiches a while back with the gals from California Lavash. I had a blast cooking with them and look forward to doing it again soon. Their pizza lavash is out of this world. These sandwiches are perfect for the summer and would look fabulous at any picnic, party or barbecue. Enjoy the sunshine!

Raspberry Cheese Pinwheel Appetizers Recipe

They may seem like an odd couple, but I paired raspberry and blue cheese to create these great party appetizers. First, I made a raspberry salad, tossed with pickled red onions, crumbled Gorgonzola cheese and candied walnuts. To make them easier to serve, I wrapped the raspberries in lavash flat bread and rolled them into pinwheel appetizers.

I secured the appetizers with party picks, so they would look elegant passed around on trays. They are great appetizers for finger food buffet parties and take no time to assemble. Fruits don't have to be used only in desserts!

Salmon Tortilla Pinwheel Appetizers Recipe

Salmon wasabi pinwheels are super easy to make. I prepared wasabi and dill-flavored cream cheese in advance and stored them in the refrigerator until dinner time. The assembling part is so simple a child could roll them. In fact, that’s exactly what we did. I let the kids prepare the rolls and then slice them into bite-sized pieces. We secured the cute appetizers with fancy hors d'oeuvre picks.

For those who can tolerate a little bit of heat, I topped the appetizers with wasabi flavored peanuts to repeat the same flavors from the filling. My husband Lulu brought them back from a recent trip to Texas. Lulu knows what a foodie I am so he always tries to find new products for me to experiment with. It’s not all that altruistic though, since he’s usually the beneficiary of these creations. Don’t I have the sweetest husband?

Cranberry Apple Pinwheel Cookies Recipe

After all the cranberry apple dishes I've made so far, I incorporated the same flavors and created pretty pinwheel cookies. The swirl is a lot easier to make than it seems. All you need is sugar cookie dough to roll around the filling. My choice for the filling was cranberry apple butter but you can use any other filling you like.

Don't get scared by the yield of this recipe! We're getting prepared for Christmas and make our logs of cookie dough in advance and store them in the freezer. They make great gifts, and the cookies are small and delicious, so they'll disappear very quickly.
