Tofu Stir Fry Recipe

Catering to a large crowd of vegetarians in my house, I often find myself cooking a lot of lentils (or any legumes) and tofu dishes. I realized I haven't cooked any tofu in quite some time, so I made my quick and easy tofu stir fry this evening. I sautéed a bunch of vegetables (Brussels sprouts, straw mushrooms, zucchini and red bell peppers) that I had on hand and mixed them with the tofu.

My husband loves this dish and says he could eat the same thing every day. I usually serve it with brown rice and a bowl of canh (Vietnamese broth). It's a complete, flavorful meal, plus it's healthy! What else could you ask for?

Breaded Tofu: Tofu Parmesan Recipe Recipe

Tofu parmigiana is one of the many variations on meat dishes I make, so I'm able to share a similar meal with my husband Lulu, who is a vegetarian. The last time I prepared this dish was to celebrate our wedding anniversary with a romantic dinner. It was a perfect date-night menu: I had chicken and he had tofu.

For this version, I breaded firm tofu with Japanese bread crumbs (panko). First, I flavored the panko with dried oregano and garlic powder. Then, I pan-fried the panko-dredged tofu, layered it with a creamy tomato sauce and a few slices of fresh mozzarella cheese and topped it all with Parmesan cheese. The cheese finished melting in the oven, and with a garnish of sweet basil the dish was complete. I served it with a side of linguine pasta. I guarantee you this dish is as delicious as the meat version!

Mướp tàu hũ xào (loofah squash and tofu stir-fry) is a standard in Vietnamese vegetarian cuisine. Mướp (Vietnamese Loofah) is stir-fried along with tofu in black bean sauce and chili garlic sauce. The dish is seasoned with soy sauce and fried garlic. I also added straw mushrooms as a foil to the loofah. Tofu Asparagus Stir Fry Recipe

This tofu dish usually accommodates everyone in my family; the tofu is fried, then sautéed along with vegetables (I cooked with asparagus and green beans today) in a mixture of black bean and chili garlic sauce.

The story behind this dish is funny. The dish is named after my father-in-law, Mir. Several years ago, he went to a Chinese restaurant for a dinner meeting and they serve this as an appetizer, similar to chips and salsa in a Mexican restaurant. It was much saltier and spicier than the recipe I make now. He liked it so much he asked the waiter to bring him a whole plateful so he could have it for dinner as a main course. And thus Mir's Special was born.
