Pan Roasted Halibut Recipe

I love fish, but halibut can be a little bland. Like other mild ingredients though, it makes a perfect canvas upon which to "paint" stronger flavors. For this recipe, I used a spicy and tangy yogurt marinade to perk up the halibut. In this case the marinade does double duty, as it not only flavors but imparts a lovely color to the fish.

The preparation of the halibut is similar to how I cook many other fish so they're covered in a thick, paste-like marinade. A brief pan sear followed by a short stint in the oven is all it takes to transform the uncooked halibut into a main course you'll be proud to serve.

Breaded Tilapia (Nori Crusted Fish Recipe) Recipe

Tilapia is an easy fish to prepare but can be pretty bland on its own. To enhance the flavor, I breaded the fish with a blend of shortbread cookies, white miso paste, wasabi and nori sheets. I covered the fish fillets with nori-flavored breading, pan-fried it and finish the cooking in the oven.

If you're trying to introduce seafood to your children, I think tilapia is a good fish to start with. It's mild in flavor and the other plus is it's inexpensive.

Lemon Crusted Fish (Baked Mahi Mahi Recipe) Recipe

This lemon crusted fish recipe is my attempt to create a savory dish using the Walkers shortbread cookies I recently received. Instead of using bread crumbs, I finely ground shortbread cookies that I blended with sun-dried tomatoes, parsley, candied kumquats, lemon zest and a few other spices.

I used mahi mahi because it's a great way to introduce fish to children, as the flesh is more subtle in flavor than any other fish. When properly cooked, mahi mahi is flaky with bright, firm flesh. To make the dish, I very briefly seared the fish, covered the fillets with the lemon crust and bakes them for a few minutes. It was as simple as that!

The shortbread crust has a buttery flavor and mild sweetness that really accentuates the fish. I set some aside and the girls were eating the crust by itself. It was such a hit that I’m thinking of recreating the dish with fried tofu instead of fish. Stay tuned.

Vietnamese Meatloaf (Mam Chung Thit) Recipe

Mắm chưng thịt is a staple of Vietnamese cuisine. It's a blend of pork or chicken, crab meat, salted fish fillet in brine, bean thread noodles, mushrooms and eggs.

For this recipe, I used a mix of chicken breast and thighs. The flavor is reminiscent of the filling of a meat egg roll combined with the strong flavor of salted fish fillet in nước mắm (brine). The most common fish used for making steam fish cakes is snakehead fish, though mackerel or catfish can be used as well.

Spinach and Pecan Stuffed Salmon Fillet with Hollandaise Sauce Recipe

The key to flavorful and tender salmon is to cook it medium-rare. Just quickly pan-sear the salmon on each side, then bake in the oven for a few minutes. It will come out moist and delicious.

Salmon by itself is incredibly good for you, and these tasty fillets are stuffed with ingredients rich in essential fatty acids and omega-rich nutrients such as pecans, pecan oil, cream cheese, sweet basil, spinach and onion chives.

To make the dish ultra fancy, I served the fish with a Hollandaise sauce, sautéed button mushrooms and wild rice. I figure that with all the healthy ingredients, a little decadence is deserved!
