White Asparagus Salad Recipe (Goi Mang) Recipe

Traditional Vietnamese cooking is widely known for its healthy properties and for the freshness of the ingredients. The food is simply prepared with very easy cooking techniques, which is great if you’re in a rush.

Gơi măng tây (which literally translates to "French bamboo shoots" in Vietnamese) is a typical Vietnamese salad that embodies these qualities. What are French bamboo shoots you ask? Asparagus! Fresh white asparagus are available at my local market, so I decided to use them in this dish. They provide a different texture for this type of raw salad. It's a bit more work than cooking green ones, as white asparagus have to be carefully peeled for optimum tenderness.

Grilled Eggplant Salad with Lemongrass Vinaigrette + A Giveaway! Recipe

Even though eggplants are available all year-round, they reach their peak during the summer. I was at the store today, and the skin looked very shiny and pretty on the Japanese eggplants, so I picked up several. I made Indian eggplant dip, but since I still had a few leftover, I decided to have some fun with them. Since these were Japanese eggplants, I made an Asian salad flavored with lemongrass and Thai basil.

First, I salted the eggplants to extract moisture from the vegetables and reduce their bitterness. A quick trip to the grill, and the eggplants were ready to eat. To give the salad dressing an Asian twist, I used lemongrass, sugar cane vinegar, extra virgin olive oil and wasabi for a little heat. I added some crunch to the salad with crushed peanuts. How easy it that?

Ga Muoi Ot: Vietnamese Chicken Salad Recipe Recipe

As you may have noticed, I love sharing cooking tips. I recently told our family friend Cô Hoa that chicken salad tastes so much better if the chicken is boiled in fried-onion flavored broth. She invited us over to her house and we made a món ăn Miền Trung, "Central Vietnamese dish" in Vietnamese, called gà muối ớt (salt and chile chicken). The recipe is ultra simple. Cô Hoa assured me that all you need is the freshest chicken possible, ginger, a little chile and salt. Nothing more, thing less. The chicken is cooled to room temperature, then shredded and mixed with rau răm, a fragrant Vietnamese coriander.

You could either store the leftover chicken broth in the freezer for future use, or on the next day make cơm gà Hải Nam, which is a flavorful chicken rice. Nothing goes to waste!

Cold Rice Salad with Papaya

We finally have beautiful sunshine in the Bay Area. We've been waiting for the sun for so long that today, in honor of our quite overdue patron of summer, I prepared a dish that is refreshing, healthy and flavorful.

Specifically, I made a cold rice and papaya salad. I boiled brown rice, and mixed in vegetables, steamed lentils, lime juice, ginger and fresh papaya. The key to good rice salad is to have a homogeneous mixture. All the ingredients should be cut the same size. The other factor for a good salad in general is a flavorful dressing. I met that requirement with a sweet and spicy papaya ginger dressing.

This version is vegetarian, but you could also finish the salad with grilled jumbo shrimp in shells or grilled chicken breasts. Also, I served it in tea cups. For an original presentation, you could serve it in papaya halves. Here comes the sun!

Vietnamese Papaya Salad with Beef Jerky: Goi Du Du Kho Bo Recipe Recipe

I've posted several Vietnamese salad recipes (called gơi) but amusingly, I've never posting my favorite of all: Món gơi đu đủ thịt khô . The salad is made of shredded green papaya, daikon radish and beef jerky. I used Vietnamese-style beef jerky, which is slightly sweet and spicy. I love this type of gơi salad so much; I ended up polishing off three bowls. In the end though, I didn't feel too bad as this dish is pretty healthy. Now, if it were three plates of Vietnamese fried shrimp and sweet potatoes (called khoai lan chiên tôm)…
