Asparagus Stuffed Pasta with Fig Hazelnut Sauce Recipe

I don't know if you've noticed but I tend to prepare healthy meals fairly often. This is my husband Lulu's request and it was his New Year's resolution to change his eating habits. He's lost 25 pounds so far and he's trying to get back to his pre-marriage weight.

Yesterday, I boiled manicotti-like pasta (big pennoni rigati) and stuffed them with a mixture of yuba (tofu skin), green asparagus spears, yellow onions and curly parsley. After completing the vegan filling, I realized I needed a binder to be able to stuff the mixture into the cylinder-shaped pasta . 

While the pasta was boiling, baby Aria and I stepped outside and randomly harvested a few ripe figs in the garden. That's when I decided to prepare a sauce for this dish made of fresh figshazelnuts, tomato paste and roasted red bell peppers. The texture came out exactly as wonderfully as I had anticipated it would. Sometimes, improvisation ends up with beautiful results!

Cauliflower Asparagus Manicotti Pasta Recipe Recipe

I’ve been feeling kind of miserable since getting home from our trip to Paris. Not only have I caught a nasty cough, but I'm still heavily jet-lagged.  What’s worse, I haven't visited the gym in almost a month and I have a mountain of tasks I need to complete very soon before I become totally overwhelmed. As you may have guessed, my cure for most problems is cooking, and today, I made one of my favorite comfort foods, something creamy, cheesy and filled with vegetables: an asparagus and cauliflower manicotti pasta.

To reduce the amount of cheese, calories and guilt in the béchamel sauce, I blended cauliflower into the white sauce. Once softened, the cauliflower became very creamy and gave extra body to the dish.

Mushroom Manicotti Pasta Recipe

I hope your long President's Day weekend was a lovely as ours. We had some company on Saturday and had a relaxing Sunday and Monday. Yesterday, we made a few appetizers and mostly snacked on these bite-size finger foods and a few sweets throughout the day. By the evening, I still felt pretty full and assumed everyone else was too, but I was so wrong. I ran into the kitchen and improvised a meal with one Portobello mushroom, ricotta cheese, manicotti pasta shells, tomato sauce and a jar of peach jalapeno preserves from our friend Martha at San Saba River Pecan Company.

I completed a salad and mushroom manicotti dish in less than 40 minutes. The challenge was to turn a handful of key ingredients into a dish as fast as possible before baby Aria woke up from her afternoon nap. Come to think of it, that sounds like a fun Food Network Challenge! At any rate, I'm proud to report my husband Lulu and family absolutely loved the dishes. I’ll share the salad with you soon.

Onion Masala Manicotti Pasta Recipe (+Giveaway) Recipe

I came up with this new dish after I received masala marinara pasta sauce from our friend Dave of DavesGourmet.com. This special sauce was the winner of the Sofi Award for outstanding pasta sauce in 2010. The sauce is very creative and definitely has a South Asian flair with hints of ginger, coconut and kaffir lime leaves. It's a must try.

Since the sauce itself is a fusion of cultures, I thought it would be fun to continue the theme and make an Italian pasta dish with Indian flavors. I made Indian-style pearl onions cooked in onion masala sauce, called dopiaza. I used that mixture to flavor manicotti stuffed with ricotta cheese and a generous helping of French triple cream cheese. If that sounds a bit decadent to you, well, it is!

Artichoke and Spinach Manicotti Pasta Recipe

I stuffed my manicotti with artichoke and spinach, and served the dish gratin-style with a layer of mozzarella cheese over the top and a bed of marinara sauce beneath. The artichoke and spinach mixture evokes the flavors of a dip, which contrasts nicely with the brightness of the marinara.

This is one of my favorite pasta dishes because it's very easy to make, while at the same time having great presentation value. Manicotti have the added benefit of freezing extremely well, so I always make them in large batches.
