How To Make Homemade Soymilk Recipe

How To Make Homemade Soymilk

04.15.14 by Jackie

A few weeks ago, we had our family friend Tam over for tea time. I raved about the fresh soymilk that we buy locally from a small shop in San Jose. Tam insisted we should make our own, and I have ever since.

The ingredient list is easy: a few soaked soy beans, filtered water and the sweetener of your choice. I've perfected the recipe since I prepare it almost daily. I flavor the soymilk with a bit of vanilla, nutmeg, mung beans and raw peanuts for extra richness. It's much healthier than the one you find at the store. All you need is a high-powered blender, a fine-mesh strainer and 30 minutes for the soy beans to cook. It's that easy to make your own soymilk!

How To Make Soymilk

03.11.13 by Jackie

Once in a while, I get into these "I-want-to-eat-freshly-made-food" moods. I've baked my own croissants and Vietnamese baguettes for my upcoming cookbook, "Banh Mi: 75 Authentic and Delicious Vietnamese Sandwich Recipes", which by the way is already available for pre-order. In the past few months, I've also made pasta, ravioli, wonton dough and of course there's my usual ritual of making fruit preserves.

I realized I haven't made soymilk at home in a long time. This weekend, I got the girls involved and we made our own. The process is ultra easy even though it's labor intensive. But the result is well worth it. The amber color is slightly darker than the one you get at the store and the velvety, almost buttery texture is very satisfying. We made many gallons of freshly made soymilk and used much of it in other dishes. I'll share those recipes soon.

Pumpkin Protein Drink Recipe Recipe

Pumpkin Protein Drink Recipe

10.22.10 by Jackie

I think if he could, my husband would drink pumpkin pie. He already inhales it every Thanksgiving! So this pumpkin protein drink is about as close as it gets to making his dreams come true. It's an ultra easy breakfast to make when you're on the go, and it’ll get you in the mood for the soon-to-be holiday season.

The drink is packed with vitamins, protein (I added soy protein) and calcium, making it markedly healthier than the real deal, and perfect for vegetarians like my husband Lulu.

Blueberry Yogurt Recipe

Blueberry Yogurt

11.01.09 by Jackie

We've been trying to eat healthier, so I've started serving blueberry yogurt to Lulu as a late night snack instead of one of my decadent desserts. Blueberries are delicious and packed with antioxidants. Many studies have concluded that a diet high in antioxidant foods prevents heart disease, cancer and reduces blood pressure. I typically serve the yogurt with unsweetened green tea (another antioxidant) mixed with vanilla soy milk.

Blueberry Maple Oatmeal Smoothie Recipe

Oatmeal Smoothies are the fastest way for me to give my husband Lulu a well balanced breakfast. It's also perfect for him when he's on the go. I already made an Oatmeal Vanilla Almond Protein Shake last week so I decided to change the flavor this week. I had blueberry preserves left in my pantry that I made last summer from the berries from our garden. Unfortunately, my blueberry bush hasn't produced any fruit yet, so I ran to my local market and got some fresh blueberries.

The smoothie turned out velvety and creamy, yet still very healthy. You can add your own twist to it by using different fruits and flavors (tropical fruits, berries, different syrups). Be creative.

It's always a great feeling to make something for the ones you love that they can appreciate.  I think that's why I love to cook. This is a perfect recipe to express your affection when you're pressed for time!
