Mushroom Barley Risotto Recipe Recipe

Mushroom Barley Risotto Recipe

04.29.14 by Jackie

My husband Lulu has been traveling a lot these days for his work. Being a vegetarian has never been an issue since we live in the Bay Area. But sometimes it can be tricky for him to find foods that fit his diet, especially when visiting the Southeast.

Since he hadn't eaten much apart from lettuce and boiled tofu, I figured comfort food would fill the void he had experienced while traveling. For his return, I prepared a mushroom barley risotto because barley is a nutritious grain that supports a healthy lifestyle with complex carbohydrates and proteins, compared to the more traditional rice grains.

The only downside is it's much less starchy than rice. So I added Colby cheese for texture and color and flavored it with nutmeg to complement the natural aroma of barley.

Since the barley risotto didn't have a striking contrast of colors. I served it on a bed of string beans. When serving foods that are visually a bit monotone, I always try to pair them with other colorful ingredients. Remember, you eat with your eyes first!

Meyer Lemon Risotto Recipe Recipe

Meyer Lemon Risotto Recipe

03.07.13 by Jackie

This is the time of the year when my husband Lulu brings me lots and lots of citrus from our garden. I'm always most excited about the lemons from our Meyer lemon tree. If you go to the market, you'll notice how expensive this variety of lemon is. It was such a treat when Lulu came inside a couple of days ago with about 50 Meyer lemons. It’s a small dwarf tree and hasn’t produced nearly as much in the past, but boy did it make up for it this year!

In honor of our bounty, I have a few recipes I’m going to dust off and make, such as Meyer lemon mousse, lemon curd, lemon cake and a few jars of marmalade. I also tried to  think of a savory dish I could make, and Lulu suggested I adapt the lemon pasta sauce I made in the past (that recipe in turn was from Ina Garten) and turn it into a risotto

This evening, I made the Meyer lemon flavored risotto and it was such a hit. I used a combination of garlic, shallots, butter and half and half in the dish, so really, how could it go wrong?

Sweet Tomato Beef Recipe Recipe

Sweet Tomato Beef Recipe

11.04.10 by Jackie

Tomato beef is one of those meals I make when I'm in a rush. The beef needs to marinate in rice wine, soy sauce and ginger for a few minutes. Once you're ready to cook, sprinkle on a little tapioca starch and sauté the beef with ketchup-hoisin mixture and fresh tomatoes.

The sweetness and tanginess from the fresh tomatoes and ketchup make the dish absolutely delicious. I added sugar snap peas for crunch and served with steamed jasmine rice. It’s a great weekday meal when you’re pressed for time.

Beet Green and Sugar Snap Pea Salad Recipe Recipe

Did you know that beet leaves are edible? This season, my husband Lulu planted chiles, zucchini, squash, tomatoes and beets. The beets came out a lot smaller than I expected but maybe it's just because Lulu wasn't patient enough to wait. The beet roots were so small that I decided against serving them by themselves. However, there were plenty of beet greens. I boiled the beet leaves as I would with spinach and made a salad.  You could probably eat the beet leaves raw if they're crisp and young, but to ensure the girls would enjoy the salad I boiled them a bit. Just make sure to pick young leaves, as they are quite tender, with little bitterness. Interestingly, when boiled they taste almost like rau mồng tơi, which is a Vietnamese green if you're familiar with Asian cuisine.

I finished the beet leaf salad with sugar snap peas for crunch and mandarin segments. It was an educational experience for me, and I can definitely say that beet leaves are quite under-rated. They're packed with vitamins A and C and iron.

I reserved the small beets that Lulu had harvested and made beet risotto for dinner. It’s a tasty way to extend the value of a small quantity of beets.

Chicken Chow Mein Noodles Recipe

Chicken Chow Mein Noodles

01.11.10 by Jackie

I prepare Chicken Chow Mein with king mushrooms, tofu, broccoli, sugar snap peas, green beans, carrots and red bell peppers. The dish couldn't be simpler to make, and is definitely a family favorite. It's a great alternative to pasta, and it's an excellent way to make use of leftovers. I often combine the leftover chicken from my poulet roti with whatever vegetables we have on hand.

Chow Mein is one of the few dishes I can cook where it's very easy to make both vegetarian and meat versions simultaneously. I just set aside a portion of the dish before I add chicken to the rest.
