Savory Granola Salad Topping Recipe Recipe

Granola topping is a healthier, more nutritious alternative to croutons for salads. I incorporated as many, if not more, flavors as I would for the bread, using lemon thyme, pine nuts, sunflower seeds, Pecorino cheese, Italian parsley, spices and extra-virgin olive oil. After the baked savory granola had cooled to room temperature, I mixed arugula with fresh cherries as an natural sweetener, drizzled a simple lemon vinaigrette and sprinkled the salad with the crunchy savory Pecorino granola topping.

I used boxed granola mix, called Granola Basics. It’s made by our friend Sarah from "Nuts About Granola" (it's their 5th anniversary!). Ever since she sent me my first box, I've wanted to explore and develop a savory version. And if you have the opportunity to purchase this awesome product, you'll see on the back of the box one of my recipes with a photo taken by me!

Artichoke Butter Recipe Recipe

Artichoke Butter Recipe

06.03.13 by Jackie

This butter is delicious on a piece of toasted bread, but would go wonderfully with pasta, fish or grilled veggies.

After making sweet potato tarte amandine and purple potato lavender white chocolate torte for my first cooking demonstration in front of a live audience recently, I had a lot of leftover high quality butter, so I decided to make a batch.

I prepared the flavored butter with artichoke hearts, a bit of sea salt, fresh basil leaves and lemon. It has a brightness to it that works well in almost any savory application. I'm planning on using the butter with a simple salt and pepper crusted steak

Lemon Butter Garlic Sauce Recipe Recipe

Lemon butter garlic sauce is a tasty accompaniment to artichokes.  Butter is used generously, in contrast to the low calorie and healthy artichoke.

If you want a healthier variant, check out my tofu vinaigrette I made a few weeks ago.

Salmon Tortilla Pinwheel Appetizers Recipe

Salmon wasabi pinwheels are super easy to make. I prepared wasabi and dill-flavored cream cheese in advance and stored them in the refrigerator until dinner time. The assembling part is so simple a child could roll them. In fact, that’s exactly what we did. I let the kids prepare the rolls and then slice them into bite-sized pieces. We secured the cute appetizers with fancy hors d'oeuvre picks.

For those who can tolerate a little bit of heat, I topped the appetizers with wasabi flavored peanuts to repeat the same flavors from the filling. My husband Lulu brought them back from a recent trip to Texas. Lulu knows what a foodie I am so he always tries to find new products for me to experiment with. It’s not all that altruistic though, since he’s usually the beneficiary of these creations. Don’t I have the sweetest husband?

Back to School Lunch Ideas: Fig Cheese Appetizer Recipe Recipe

My husband's youngest sister is starting 1st grade next Wednesday. We just met her new teacher and classmates during a lovely potluck picnic this week. Our first "homework" is to prepare a menu for her lunch box. She's very excited about what we will pack for her.

Our family friend Chú Quân had kindly just brought us humongous fist-sized figs from his garden. I immediately thought of a snack my little sis-in-law wouldn't be able to resist. This fig and cheese sandwich recipe is ultra simple. I pack separate containers of the ingredients (fresh figs, fig jam, camembert and pizelle anise cookies) and let her assemble the snack!

I'll be posting more B2S recipes next week as my little munchkin starts school, so stay tuned!
