My 1000th Recipe!

Today is a very special day for PhamFatale.com! It seems like just yesterday that I launched the website and I can hardly believe that we’ve already made it to the 1000th recipe. Well technically, this is the 1001st recipe but I couldn't resist baking a cake to belatedly celebrate the occasion. It's a fairly simple cake, made of layers of mascarpone custard, chopped strawberries and vanilla frosting. 

As I've said in the past, food is an ephemeral art form and it's easy to forget what you've made and what you've eaten. PhamFatale.com has become a living record of the meals I've prepared for, and with, my friends and family, and I've had such a blast sharing my daily culinary adventures with all of you. So many good memories are preserved in these web pages and this year has been chock full of them. It has truly been a pleasure to learn from, share tips with and otherwise interact with food lovers from all around the world. Although I owe my success to all of my faithful foodies, there is one food lover in particular who is especially near and dear to my heart. I'd like to give a special thank you to my friend Carole, whom I met after she sent me an email when I was featured in the San Jose Mercury News several years ago. Ever since, she has helped edit all the recipes that I've posted as well as my upcoming cookbook, Haute Potato, which comes out this December. Carole has a great eye for detail and a wonderful culinary sensibility to boot. I never would have dreamed that meeting over coffee and talking about our passion for food would turn into such a special friendship, and for that I am so grateful. 

Again, thank you all for your support. I've been pretty overwhelmed with messages on Facebook, Twitter and your private messages, but I promise I'll make it my top priority to respond to all your lovely comments. Please be assured that I enjoy reading every single one of them, and they always fill me with so much joy. In fact, my morning rituals couldn't be complete without your wonderful messages, my workout routine and of course a special kiss to my baby daughter!

Halloween Dessert: Strawberry Brownie Pudding Recipe Recipe

The girls absolutely love Pocky Sticks. If you’re not familiar with them, they're a popular Asian snack consisting of long, thin crackers dipped in icing. I received several packs of strawberry-flavored Pocky Sticks from Asian Food Grocer, and instead of just letting the girls devour them, I thought it would be fun to use them in a dish.

I adapted one of Ina Garten's brownie pudding recipes and made it look pink to match the Pocky Sticks. I used mini marshmallows to create teeth and Godiva chocolate pearls for the eyes. The Pocky Sticks serve as the hair. I’m thinking of serving these happy-looking treats to the kids for Halloween in a couple of weeks. Last year, I made witch-looking finger cookies that looked so realistic, children in my little munchkin’s class refused to eat them!

Gluten Free Cheesecake Parfait Recipe Recipe

It's National Cheesecake Day this weekend and, though I’ve made many cheesecakes in the past, my goal was to put a new twist on the special dessert. Since we were invited to our friend Carol's home (she’s gluten intolerant), I decided to make my cheesecake gluten-free.

I made the mousse egg-free and flavored it with both raspberries and strawberries. For a contrast in texture, I added a layer of crunchy, diced yellow nectarines. And to make it look more fun, I topped the dessert cups with pistachio-flavored whipped cream and crushed pistachios. I don’t think anyone missed the crust. For those who could eat gluten, I slipped a ladyfinger cookie into the verrine. How amazing does that sound?

No Bake Strawberry Cheesecake Recipe (Egg Free Dessert) Recipe

If you're searching for a no bake cheesecake recipe, look no more. It looks fancy but it's ultra easy to assemble. As a bonus, it's an egg-free dessert. So what's not to love? Give this mascarpone cheese dessert a try.

I flavored the cheesecake filling with strawberries and added bananas for a thicker texture. Instead of placing the cheesecake in a spring-form pan, I decided this time to shape the dessert in a long triangular mold I usually use for making terrines (French jellied meatloaf). I first covered the molds with store-bought Italian-style lady finger puffs and completed it with the strawberry-and-banana-flavored cheesecake filling. The presentation turned out pretty spectacular. You know the saying: you eat with your eyes first!

Strawberry Cheesecake Recipe

As I mentioned yesterday, the girls are planning to prepare a scrumptious meal for Mother's Day. My mother-in-law has a sweet tooth, so we decided to surprise her with a homemade strawberry cheesecake. Well, it will be a surprise as long as she doesn’t read this!

This is not your average cheesecake. The crust is made with macaroons and the filling is flavored with both coconut extract and fresh strawberries. My cousin Tri just brought a giant case of strawberries he hand-picked himself with his wife at a “you pick’em” farm in Brentwood. The strawberries were rich in color and flavor. If the strawberries you have aren't very flavorful, you could add a few teaspoons of strawberry extract to reinforce the flavor. We taste-tested the cheesecakes this afternoon and it was a big thumbs-up. Even my little sis-in-law who's allergic to egg yolks could have some, which was quite a treat for her.

In addition to the heart-shaped cheesecake, the girls had the idea to finish the decoration by cutting the fresh strawberry halves into a heart. Isn’t it adorable?
