Shredded Carrot and Walnut Salad Recipe Recipe

Delicious food doesn't have to be complicated. Today I made carottes rapées, which is a staple in French cuisine and requires almost no complicated preparation. This version isn't completely authentic because of a few enhancements I made. Specifically, once the carrots were "rapées" (shredded), I added freshly shredded Parmesan cheese, a few capers, fresh dill and sesame caramelized walnuts. 

There's a saying in French: "Mange des carottes, ça rend aimable!", which translates to "eat carrots, they will make you become more kind". The saying owes its origin to the donkey, which has a reputation for being very stubborn. Carrots were used as, well, a carrot, to make the donkey move faster. So if you’re kids or your significant other are giving you a hard time, try feeding them carrots. It works for me!

Breaded Tofu: Tofu Parmesan Recipe Recipe

Tofu parmigiana is one of the many variations on meat dishes I make, so I'm able to share a similar meal with my husband Lulu, who is a vegetarian. The last time I prepared this dish was to celebrate our wedding anniversary with a romantic dinner. It was a perfect date-night menu: I had chicken and he had tofu.

For this version, I breaded firm tofu with Japanese bread crumbs (panko). First, I flavored the panko with dried oregano and garlic powder. Then, I pan-fried the panko-dredged tofu, layered it with a creamy tomato sauce and a few slices of fresh mozzarella cheese and topped it all with Parmesan cheese. The cheese finished melting in the oven, and with a garnish of sweet basil the dish was complete. I served it with a side of linguine pasta. I guarantee you this dish is as delicious as the meat version!

Fried Polenta with Raw Beet Sauce Recipe

Polenta is a great alternative when you’re bored with pasta, rice or bread. It works well as a side dish but could also be served as a main course. As an added bonus it's gluten-free, which is very convenient if you're serving it to someone with allergies.

I got a little lazy so I did not cook and form logs of polenta myself; I used store-bought instead. The taste doesn't differ that much, except when I make my own, I usually add a bit of butter , cream and Parmesan cheese for extra flavor. The pre-cooked version is much healthier.

To ensure the success of this dish, the key is to make plenty of sauce to enhance the flavor of the polenta. This time around I made pesto, but with a twist. I made it with raw beets, then sautéed some button mushrooms and melted goat cheese. The combination of both mixtures made the perfect sauce for this polenta.

Parmesan Risotto with Wheatberries and Morel Mushrooms Recipe

My husband Lulu was craving risotto lately. Unfortunately, risotto can be pretty rich, which doesn’t exactly mesh well with our exercise routine. I don’t think exercising should be a form of punishment, so I took Lulu’s craving as an opportunity to be creative.

After thinking about it, I decided to make mushroom risotto using fresh morels. I chose morels because they are packed with flavor. Instead of using heavy cream and other calorie-packed ingredients, I let the mushrooms provide most of the flavor in the dish. I also added wheatberries to the Arborio rice for texture. Just make sure to soak the wheatberries overnight, so that they aren't too chewy.
