My husband Lulu's niece and nephew spent the afternoon with us. It was so nice having so many children in the house. Of course, our daughter Aria was the center of attention and she loved it! While they were playing with the baby, I prepared dinner. I cooked some brown rice (Lulu's request since the beginning of the new year) and made mushroom tofu stir fry.

The stir fry is composed of combined shiitake mushrooms, oyster mushrooms and enoki mushrooms, Japanese eggplant, sugar snap peas and tofu, of course!

Spicy Eggplant Recipe

This eggplant side dish is very easy to prepare. It's perfect if you want to cook Asian food for a vegetarian crowd. I sautéed Japanese eggplants in a hoisin sauce-based mixture for its caramel color and subtle sweetness. To this, I added several crunchy ingredients  such as shredded bamboo and black fungus mushrooms (called nấm mèo in Vietnamese) to balance the soft texture of the eggplant.

It's important to add spiciness to the dish as the eggplant can be a little bland. I added sliced jalapenos, grated ginger and store-bought chile garlic sauce. The result is a combination of sweet, garlicky, spicy and savory.

Hoisin-Glazed Roasted Sea Bass Recipe Recipe

We hosted a dinner party this evening. I served a surf and turf main dish composed of a steak and sea bass. I really wanted to find a decadent, over the top kind of fish for this special evening. Sea bass seemed like the perfect choice; it's a lean fish with a meaty texture and a rich, buttery taste. I glazed the fish with hoisin and miso. The firm white fish pairs very well with the sweet and salty glaze. I quickly seared the fish on top of the stove to create a caramelized crust around the fish and finished roasting it in the oven.

This dish took me down memory lane, back to when Lulu and I were preparing for our wedding reception. I remember this particular hoisin glaze was one of the options we selected.

Vietnamese Peanut Hoisin Dipping Sauce Recipe (Tuong Goi Cuon) Recipe

We brought summer rolls this weekend for a barbecue potluck. Traditionally, the rolls are served with a sauce made from liver but as a child, I always had an aversion to it. So I made tương gỏi cuốn (which literally translates to "sauce for salad rolls" in Vietnamese) with ingredients that would be appealing to a Western palate.

The condiment is a blend of peanut butter, hoisin sauce, ginger garlic paste, đậu (lentils), coconut water and a few ingredients that balance the sweet and sour taste. For more crunch, the summer rolls are first dipped in chopped peanuts.

Whether you serve this sauce with summer shrimp rolls or veggie spring rolls, it will knock your socks off!

 Vietnamese Grilled Beef Rolls (Bo Cuong Hanh Huong Recipe) Recipe

Bò nướng hành hương is a wonderful South-Vietnamese specialty. It's a dish of beef wrapped around sliced yellow and green onions, then grilled to medium doneness. The beef is infused with the aromatic scent of green onions and five-spice powder rub with honey. The blend of all the flavors gives the meat a sweet, sour, bitter, pungent and salty taste.

The dish is traditionally served with vermicelli rice noodles (bún) and aromatic Vietnamese herbs, but I served mine with nước chấm, ginger guava sauce and crushed peanuts. The main component of ginger guava sauce is guava jam. It can be difficult to find, but it's available in some Indian stores. Make the effort to find it because the flavor is amazing, and it contrasts with the beef very well.

I make this dish quite often for parties because it's easy to eat in one or two bites and doesn't interrupt conversations. Try it as an appetizer at your next dinner party. Your guests will love you!
