Tomato Chutney Appetizers with Blue Cheese Recipe

Living in a multicutural household, I love melding flavors on our plates. This evening, I had leftover tomato chutney and created mini blue cheese appetizers. How cute did they turn out? 

The spiciness from the chutney against the richness from the cheese is always a hit. And if you prepare the chutney in advance (you could also use any store-bought chutneys mixed with a bit of tomato sauce), you can bake these adorable appetizers in no time.

Aria, at only 28-months-old, is already the best sous-chef a mom could ever hope for. She helped me play and create disks of puff pastry. Aria's always eager to learn new things. Cooking with your toddler is a great method to practice and learn new shapes.

Pear Blue Cheese Yam Appetizers (Thanksgiving Recipe) Recipe

This recipe was heavily inspired by my childhood BFF Alexia's soon-to-be husband Olivier. While we were in Paris, my husband Lulu, baby Aria and I visited Alexia and Olivier, who also have a baby girl just a few months younger than Aria. Our meeting was so pleasant, as usual, and Olivier, who is an incredibly talented cook, treated us to a wonderful lunch tasting menu that day. One of the items was blini topped with pear and blue cheese. The dish was very well balanced and I told him at the time that I would make my own version and post it on Pham Fatale when I got back home. So Olivier, c’est pour toi (this is for you)!

Given that Thanksgiving is just around the corner, I decided to adapt the appetizer to use roasted yams instead of blinis. I thought the crunch and natural sweetness from the yam would marry wonderfully with the soft pears and pungent blue cheese, and it did! Additionally, I spread the yams with a thin layer of Anaheim pepper chutney and topped them with walnuts for more crunch.

Yesterday, after receiving several emails from friends notifying me that my first cookbook, "Haute Potato", is already "in stock" on Amazon and BarnesAndNoble.com, I contacted my publisher. Indeed, both are shipping my book early on pre-order, which is wonderful news if you're looking for potato dishes for Thanksgiving or Christmas. The official publication date is still December 18th, which is the date my book hits the shelves in bookstores.

Cantaloupe and Cheese Appetizer Recipe Recipe

I love Emmentaler cheese. It has mild, fruity and nutty attributes, which pair incredibly well with fruit. One fruit it particularly works well with is cantaloupe. Since I had both on hand, I caramelized the cantaloupe in a little butter and then alternately skewered it with cubes of Emmentaler on cocktail picks. I finished the cute bites with crushed pistachios.

These cheese appetizers are easy to prepare and get devoured amazingly fast too. They would fit quite well in a buffet style party. Even if you aren’t planning a party, take advantage of the wonderful fruit that's currently in season, because summer won’t be here forever!

Apricot Brie Appetizer Recipe

I love French cheeses. This week, I gave myself a treat and bought a wheel of triple cream Brie cheese. This particular cheese has an exquisite flavor and luscious, creamy texture because it is made with heavy cream as the base instead of only milk. I spread the soft, buttery, cheese onto sesame Persian bread and garnished the top with dried apricots and hazelnuts.

Even though the cheese appetizers contain exceptionally high fat content, I enjoyed every single bit. Serving them in small portions also helped me feel a lot less guilty! I just thought to myself, dried fruits are good for you; they're full of fiber, plus they taste delicious with a juicy flavor.  Hopefully they'll counteract the calories of the Brie cheese!

Peach Comte Cheese Appetizer Recipe Recipe

I've had in mind for some time now to pair ripe stone fruit with Comté cheese. It's one of the most popular gourmet French cheeses, originating from the Jura region of France. It's fruity with a hint of nutmeg, while still tasting mild. To balance the flavors, I added sun-dried tomatoes, marinated red onions and a drizzle of spicy mint chutney. The peaches were so ripe and juicy that there was no need to quickly blanch them as the skin peeled off very easily.

Over the weekend, we ordered take-out food from one of my favorite restaurants, Shalimar in Fremont. We had a lot of leftover naans, so I used them the next day to make the cheese appetizers. Nothing goes to waste in our home!
