Creamy Ricotta and Bell Pepper Crostini Recipe

What do you do with stale bread? Make crostini. It's one of my favorite ways of turning a day-old baguette into an elegant appetizer. I love them and could eat a ton!

Typically, crostini is grilled (or toasted) bread that is covered with a flavorful topping. I made mine with a red bell pepper purée and paired it with left-over goat ricotta cheese. The cheese brings some creaminess to the topping and I love the subtle taste of the chèvre (goat in French). I flavored the crostini with some fresh mint and Meyer lemon from the garden.

Lamb Medallion Dijonnaise

We served lamb medallions dijonnaise as an appetizer during our wedding reception 4 years ago in July. I thought recreating the dish would be a nice way to relive the memories, especially since I didn't get to eat much on our wedding day. We had a little family gathering this weekend so I made the medallions of lamb and placed them on sweet onion crostini. I garnished them with Dijon mustard and some chives from the garden.

If you're not a big fan of lamb, you can use spice as I did in this dish to mask the strong flavor of the meat. I crusted the sirloin with black pepper, cumin and sumac powders. I also added some cumin and coriander to the sweet onion relish to give it a slightly Indian vibe.

Garlic Parmesan Bread Deluxe Recipe Recipe

We had some guests over last night for dinner and I had 2 baguettes left. Nothing goes to waste. I created some garlic parmesan bread that are to die for. All you need is a few spices from the pantry, butter and some parmesan.  And of course garlic.  LOTS of garlic.
