French Green Lentils

Unlike in traditional Indian cuisine where lentils are usually the main dish, French green lentils are served as a side with sausages or various meats. Of course, with as many vegetarians as I have in my home, I typically serve it without meat.

In this recipe I cooked the lentils with fennel, fresh lemon thyme, black peppercorns, caramelized onions and a bay leaf. They lentils are known as “Puy” lentils because they originate from Le Puy, in the Auvergne region of France. They have an almost blue-ish shine with a delicate, peppery flavor.

Asian Style Warm Potato Salad

This potato salad is made with a medley of Japanese white sweet potatoes, yams, Yukons and Peruvian purples. The different varieties provide a contrast of both flavor and color. To give the salad an Asian flair, I also added bok choy and several types of mushrooms. The dressing, made of honey, rice vinegar, soy sauce and ginger paste, helps tie the flavors of the vegetables together.

Israeli Couscous and Lentil Salad with Roasted Red Bell Pepper Gelee Recipe

I think Israeli couscous and lentils are a great combination. Lentils are often eaten with rice, and couscous is really just a grain shaped semolina pasta, so it's a perfect replacement.  

I added a roasted red bell pepper gelée for texture and flavor. It is basically a red bell pepper and walnut caviar, un caviar de poivrons aux noix in French, that I mixed with a little agar so it would hold its shape when I stack the layer of lentils, bell pepper and israeli couscous in a circle cutter for a nice appealing presentation.
