Fried Polenta with Raw Beet Sauce Recipe

Polenta is a great alternative when you’re bored with pasta, rice or bread. It works well as a side dish but could also be served as a main course. As an added bonus it's gluten-free, which is very convenient if you're serving it to someone with allergies.

I got a little lazy so I did not cook and form logs of polenta myself; I used store-bought instead. The taste doesn't differ that much, except when I make my own, I usually add a bit of butter , cream and Parmesan cheese for extra flavor. The pre-cooked version is much healthier.

To ensure the success of this dish, the key is to make plenty of sauce to enhance the flavor of the polenta. This time around I made pesto, but with a twist. I made it with raw beets, then sautéed some button mushrooms and melted goat cheese. The combination of both mixtures made the perfect sauce for this polenta.

Zucchini with Parmesan and Croutons Recipe

I love zucchini. It’s so easy to cook, which is nice in the summer when I want to minimize my time in the kitchen. The one issue to keep in mind though is that zucchini tends to become watery as it softens, so to counteract this I added bread croutons to soak up all the juicy flavors. I learned that trick from Emily, Lulu’s friend.

I used leftover masala tandoori naans for the croutons and flavored the dish with Herbes de Provence, lemon zest and Parmesan for added natural saltiness. This vegetable side dish pairs wonderfully with roasted duck (my favorite meat) or chicken.

Pasta Shells Stuffed with Porcini Mushroom Walnut Pesto Recipe

This is a vegetarian pasta dish that even a meat lover won't be able to resist. The porcini mushrooms add a rich, meaty flavor to the pesto, and the walnuts provide a crunchy kick. You could serve the pesto with any pasta, but I like the pasta shells because of their presentation value.

As an added bonus, the pesto is not only really easy to make, but will keep very well in the freezer. Make some extra and you'll be able to whip up a quick meal when you're in a hurry.

Grilled Polenta with a Creamy Lemon Caper Goat Ricotta Cheese Sauce Recipe

Polenta is a fine-ground corn that is pretty easy to prepare. It can either be prepared soft and creamy, or dry and firm. Personally, I prefer the consistency of the firm version. The preparation is fairly simple; just constantly whisk the cornmeal in liquid until each grain swells up, refrigerate and cut into slices. Right before you're ready to serve, place the polenta on a grill pan to create some nice grill marks.

To create the perfect summer dish, I've paired grilled medallions of polenta with a creamy lemon caper goat ricotta cheese sauce. It's divine!

Summer Vegetables and Hummus Pizza Recipe

Hummus pizza breaks the traditional rules by using a garbanzo bean spread instead of the standard tomato sauce. I added some Mediterranean ingredients to keep the flavor fresh, such as asparagus, garlic, roasted red bell peppers and artichoke hearts.

It's the perfect recipe for a light summer meal; the few shavings of parmesan cheese is the only sinful ingredient in an otherwise very healthy pizza.
