Black Mushroom Tofu Recipe Recipe

Black Mushroom Tofu Recipe

04.02.14 by Jackie

In Vietnamese, this tofu dish is called tàu hủ xào nấm đông cô. This particular variety of mushrooms is delicious. Once re-hydrated, they have a fleshy, plump and even meatier, chewier texture than fresh shiitake mushrooms.

The delicate part of this preparation lies in soaking the mushrooms. You could soak them in cold water overnight or, if pressed for time as I was, re-hydrate them in warm water for about 1 hour. I saved the flavor-packed soaking liquid and made a thick sauce to accompany the tofu. I don't prepare this dish very often because one of the ingredients can be a little pricey, but it is sooooo tasty!

In order not to serve a mostly colorless dish, I included bright green string beans.

Green Bean and Fennel Tart Recipe Recipe

I spent the entire week in Los Angeles. I took the opportunity to visit relatives and family friends, and I even ended up teaching them a couple of dishes.

The concept for this savory tart is very simple. I showed them how to make a flaky crust that took no more than 5 minutes. Then I used whatever vegetables we had on hand. This version contained thinly sliced fennel, shallots, super sweet baby bell peppers and dill for the filling. I wanted a pop of color, so as soon as the tart was fully baked, I topped it with boiled, bright green haricots verts and a few slices of homemade mozzarella. I returned it to the oven for a few minutes and we were done. What a fun way to spend Sunday in the kitchen!

Roasted Butternut Squash Orzo Recipe Recipe

This orzo pasta dish can either appeal to a vegetarian as a main course or to others as an accompaniment for the meat or fish course of the meal. And the ingredients make it perfect for Thanksgiving.

To make the dish, I simply roasted a butternut squash, mixed in cooked orzo pasta and added a wide range of vegetables such as carrots, sun-dried tomatoes, artichoke hearts and string beans, as well as pan-fried tofu cubes for extra protein and dried cranberries to bring home the autumn-theme of the meal.

This sweet and tart side dish can easily be prepared in advance. All you have to keep in mind is to cut all the ingredients the same size for a homogeneous texture. I also tried selecting various colors to make the dish look appealing.

Salmon Orzo Salad Recipe Recipe

Salmon Orzo Salad Recipe

10.22.13 by Jackie

Today, I prepared a salmon orzo pasta salad. The dish is fairly simple. I broke baked salmon into large pieces and combined them with orzo pasta and a variety of vegetables such as zucchini, corn, roasted bell peppers and string beans.

Baby Aria has a good appetite and given that she's more of a toddler now, she’s able to eat whatever we eat. She's becoming independent and discovers the textures, colors and tastes of new foods every day, especially since she's able to pick up food with a spoon and eat by herself. With dishes like this one, feeding kids nutrient-rich, colorful foods couldn't be easier!

French Carrot Salad Recipe (Carottes Rapées) Recipe

Carottes rapées are a French classic; simple crisp, shredded carrots are mixed with green beans, toasted pine nuts and Italian parsley.

I drizzled lime vinaigrette over the slaw-like salad and mixed until evenly distributed. If you look at the condiments in a traditional banh mi (Vietnamese sandwich), you'll find another version of shredded carrots called đô chua. The recipe for đô chua is in my new cookbook, Banh Mi, available from Amazon and Barnes & Noble. I'll be talking about it for the first time on Chef Bev Lazo's radio show The Coolinary Trends on iRantRadio.com today (June 27th) at 8pm PST. Hope you can join us!
