Little Aria's favorite dish of the moment is a good noodle stir fry. It's super easy to prepare and I'll show you how to master this dish using 3 main flavorings: garlic, green onions and some chiles.

The secret is to fry the garlic first. You have to make sure you don't burn it or the noodles will have an acrid taste, which could be very unpleasant. If this is the case, simply throw the garlic away, wash the pan and start over. The other key is stir fry the noodles over high heat; you could also add a dollop of butter at the end for extra richness, if you like.

Zucchini Chow Fun Noodles (Vegan Recipe) Recipe

My husband Lulu is back after more than a week spent in China for work. As a vegetarian, he was pleasantly surprised by the wide array of delicious vegan foods available. He raved about a broccoli chow fun he had there. So I prepared another green version, using Vietnamese, ready-made bánh ướt (you could use previously cooked, wide, brown rice noodles for an even healthier dish), leeks and zucchini.

Since the noodles were pre-cooked. It took less than 10 minutes to stir-fry the vegetables. It was quick and simple, healthy and very tasty. It was my way of hinting to Lulu that he won't have to fly to Shanghai or Beijing for so long!

Chow fun is called hủ tiếu xào chay (literally "vegetarian rice noodle stir fry") in Vietnamese and consists of wide, chewy rice vermicelli noodles stir-fried with tofu and vegetables. I made the dish chay ("vegetarian") but you can certainly add meat, such as beef, which will make the dish all the more delicious.

I make these noodles very often at home. I could eat freshly made hủ tiếu by the platter! It's quick and simple, healthy and very tasty. Living in the Bay Area means that I'm lucky enough to have fresh rice noodles readily available. I just need to drive to downtown San Jose. San Jose has a large Vietnamese community so it's very easy to find all sorts of my favorite ethnic ingredients.

Mi Xao Chay Recipe (Vegetarian Soft Egg Noodle Stir Fry) Recipe

I love making noodle stir fry. It may seem a little complicated but if you're methodical, you'll be able to master this dish in no time. What makes this noodle dish special is the use of pineapple both as an ingredient and as a seasoning for the noodles themselves.

First, I prepared the green bean and tofu stir fry and set it aside. The next step is boiling the fresh egg noodles, then cooking the pineapple (trái  khóm in Vietnamese) in a thick sweet and sour sauce. Finally, all you need is to toss the noodles in the sauce and add the tofu and green beans.

Soba Noodle Salad Recipe

If you follow me on FacebookPinterestTwitter or Instagram, you've probably seen how huge the plants in our garden are. Thanks to the recent sunny, warm weather we’ve experienced, they have really taken off.

To celebrate our first crop of Persian cucumbers, I prepared a chilled noodle salad. I used soba noodles, a variety of fresh vegetables, flavorful peanut sauce, fresh mint (again from our prolific garden) and dill. Soba noodles are Japanese-style buckwheat. If you can’t find them, you could use whole wheat angel hair pasta for a similar texture.

I prepared everything in advance in the morning and assembled the salad later at the last minute. That's what I call healthy, fast food!
