I wanted to create a festive, yet exotic salad in anticipation of the holiday season. So I prepared a homemade crouton, crab, mango and pomegranate salad. It was especially easy to prepare, and I completed it in no time as I used store-bought, pre-cooked crab. I also used the last pomegranate in our garden. The sweetness was incredible. 

I think this salad will really light up our Christmas table this year. Not only it is nutritious, complete and healthy, but there is added significance for me because it combines ingredients from all the cultures in my home: French (croutons, Herbes de Provence and pomegranate), Vietnamese (green mango and crab) and Indian (fried paneer cheese). How delicious does that sound?

Cauliflower Salad with Roasted Bell Pepper Dressing Recipe

Here's a recipe for a delicious, inexpensive and healthy dish. I prepared a simple cauliflower salad with two entire heads of cauliflower. The wow factor resides in its delicious salad dressing; I made it with roasted bell pepper, which gave a warm and inviting tone to the dish. Additionally, I used pine nuts for extra creaminess and a more complete protein source.

Cauliflower Tomato Salad Recipe

We recently had guests for dinner and I made a cauliflower and tomato salad. I explained to our guests how this "salade de chou fleur et tomates" was made and the following day our guests emailed me back thanking me for this new recipe.

Inevitably, whenever we have guests over, my mother-in-law exclaims "Look what an amazing dish Jackie made today! Did you know Jackie has a food website? She posts daily recipes on PhamFatale.com and she's a soon-to-be published author." And whenever she goes anywhere, she talks about my cooking and about PhamFatale.com. And now that I have my first cookbook coming out soon ("Haute Potato" due on December 18th), she hands out cards to promote my book. She's my own one-woman PR firm!

Back to the dish...I boiled cauliflower very briefly then flavored it with champagne vinegar and a bit of honey. I mixed the cauliflower with beautiful heirloom tomatoes from our garden and shredded lettuce. For a nice contrast in texture, I added lightly toasted almond slices. If you want more crunch you could also top the salad with croutons.

French Cauliflower Salad Recipe (Salade de Chou Fleur) Recipe

Today's recipe is an easy and healthy salad called "chou-fleur vinaigrette". During my childhood in France, it was a dish that was served fairly frequently at the cafeteria of my elementary school (carottes Vichy too!). Cauliflower is boiled, then coated with vinegar and oil and sprinkled with flat-leaf parsley. That’s it! Who says French cooking has to be complicated?

I've mentioned quite a few times lately that I've been trying to eat healthier. Cauliflower is a big part of that because it's packed with fiber and vitamin C. But cauliflower salad is not a full meal by itself, so I added hard-cooked quail eggs and a piece of bread on the side. It’s a simple, quick and healthy summer meal. Rachael Ray would be proud!

French Rice Salad Recipe

Salade de riz aux légumes is my attempt to serve my family healthy food that doesn't sacrifice flavor. As you may have noticed, I have a tendency to make food that is a bit rich. We're all trying to workout more and get into good shape, and while I won't ever give up butter and cream, I've learned that I don't have to put it in every dish.

The rice salad is made with a blend of both brown and white rice for a balanced texture. I also added a mix of vegetables that are available this time of the season (the zucchini and squash are from our garden). I used fresh steamed corn, roasted bell peppers, diced tomatoes, grilled eggplant, edamame and tofurkey.

Since there is no cheese involved, I was afraid the rice salad would lack flavor, so I made spicy vinaigrette. Since I still need "real" protein besides the edamame beans and tofurkey, I added smoked turkey in a separate batch. Everyone enjoyed it, myself included!
