To fit my Meatless Monday tradition, here's a list of healthy snacks I've been cooking lately. My moto to get back into shape is to cook with fresh ingredients, legumes and grains and create toothsome, tasty  bites packed in protein.

Cabbage is good for you so why not eat it up! It's also inexpensive, packed with flavor and easy to prepare. Whether it's slow baked, sautéed, roasted, stuffed or shredded, I'm sure you'll find some inspiration in the list of these 12 trusted cabbage recipes I've gathered for you. 

I just bought a head of Chinese cabbage and a red one and I'm ready to get fit and pretty for our next summer vacation. I have 12 weeks until our family getaway to Cancun, Mexico (we spent our 5th wedding anniversary there). Controlling your diet can be fun too; it doesn't have to mean food should taste bland or be without great texture. Now I'm excited to create more nutritious dishes with the humble cabbage!

Balsamic-Braised Red Cabbage Recipe Recipe

I love red cabbage, and I find that some of the best product is available around this time of the year. Its deep ruby color is so appealing. It's very inexpensive and it lasts for a long time. You can either braise, boil, pickle or even purée it.

This evening, I shredded the cabbage and braised it with a balsamic reduction and peanut butter. The result is a lightly sweet and rich side dish. I topped it with shaved sweet Nabulsi cheese for a nice contrast in color.

If you haven’t already, take advantage of this beautiful vegetable at its peak quality. Your taste buds will thank you!

Chinese Cabbage and Lotus Salad Recipe Recipe

When writing my second cookbook, Banh Mi, which by the way is already available for preview and pre-order, I tried to share authentic and traditional recipes for Vietnamese sandwiches, condiments and sides. If you've ever tasted a bánh mì, you probably are familiar with the standard condiment of pickled carrots and daikon. It takes the place of cornichon-based pickles (tiny French gherkin pickles) found in Western sandwiches.

You can of course vary the ingredients to your liking, and in this recipe I prepared a modified version of the bánh mì condiment with shredded Chinese cabbage, pickled lotus and freshly-picked satsuma mandarins that baby Aria helped me gather from our garden --follow me on Twitter and Facebook to see more pictures-- (sadly it was our very last batch). With a few peanuts and a nice dressing, it makes a great salad. Though it isn't strictly speaking a traditional pickle, you could also use it in your own bánh mì sandwich. The flavors are mellow enough to let the meat or tofu of your choice shine.

Cabbage Gratin Recipe

The weather has been so cold and windy in the Bay Area that this gratin dish received a warm welcome from the family at dinnertime. Little cottage cheese filled cabbage dumplings are cooked in a hearty mache sauce, then finished with a bit of cheese. Cabbage gratin, or "gratin de chou" in French, has comfort food written all over it.  

I tried to make this gratin as healthy as possible. This casserole dish is packed with greens and is high in protein, since 14 ounces of cottage cheese has at least 50 grams of protein (compared to a 6-ounce steak with 42 grams). Not that you should consider eating the whole thing by yourself!
