Lasagna Primavera Recipe

Lasagna primavera is a dish I came up with by stacking sheets of lasagna pasta and alternating them with loads of vegetables that were available at the local market. This morning, I found beautiful white button mushrooms, zucchini, onions, carrots and yellow, red and green bell peppers. I couldn't resist preparing a colorful meal. 

To ensure the vegetables remained the focal point of the dish, I only added enough béchamel sauce to hold the lasagna together and flavored it with basic herbs such as basil, thyme and oregano and a sprinkle of Parmesan cheese for extra nutty, salty flavor. This may not be a truly authentic lasagna recipe, but it’s delicious and a great way to get fussy eaters to eat their vegetables.

Zucchini Lasagna Recipe

My husband Lulu has become such a garden expert over the years. This morning he harvested over 2 pounds of zebra striped zucchini in our garden, which left me almost speechless. I wasn’t expecting to make a zucchini dish today, but that’s half the fun of having your own vegetable garden!

I decided to prepare a vegetarian zucchini lasagna. The dish consists of three elements: a creamy béchamel sauce, an enormous amount of pan-fried zucchini and my special lasagna sheets from my Haute Potato cookbook. Instead of using regular lasagna pasta sheets, I used homemade gnocchi dough flattened into long thin sheets. When writing Haute Potato, I really tried to think outside the box and came up with a few potato recipes that I believe haven't been created before. If you don't have time, you can always substitute with the store-bought regular lasagna sheets. But if you have time to cook during this long Memorial Day weekend, give my Haute Potato recipe a try; rest assured your efforts will be rewarded.

Vegetable Pasta with Zucchini Sauce Recipe

Zucchini pasta is my way of using all the zucchini we bought at the farmers' market last weekend. I cooked the vegetable two ways and combined them in this flavorful pasta dish.

First, one part of the zucchini is boiled in a large amount of water until soft and tender, then cooked the same way as I would baigan bharta (Indian-style eggplant spread) but instead of only adding liquid smoke and plain yogurt, I also mixed in a little cream cheese. The second step is to sauté the rest of the zucchini with other vegetables. I also used diced carrots, green beans and sun-dried tomatoes.

Once all the ingredients are cooked, I combine everything and the result is a scrumptious meal. The smoky aroma from the zucchini sauce is very delicate and the added vegetables balance well with the softness of the pasta.

Zucchini Radiatore (Vegetarian Pasta Recipe) Recipe

I love the vegetables my husband has been harvesting this season. We've had lovely zucchini so far. I've already used the zucchini flowers and stuffed them with risotto, and today I sautéed the zucchini with radiatore pasta. Lulu also pulled plenty of red Creole onions from the ground, so I used them to flavor the vegetarian pasta dish.

If you're able to plant your own vegetables, you should try zucchini. The young ones are sweet and more tender. They're fairly easy to plant, and if you take good care of them, they can be prolific.

You could pair any other pasta with the veggies in this dish, but I think the lace-shaped pasta looks very fancy. To make the dish a little healthier than my usual pasta dishes, I added very little cheese (I used Asiago for its strong flavor) and instead used enoki mushrooms, which resemble strings of cheese. It’s a great way to trick the kids, both little and big, into eating healthy!
